    Instant Mango Pickle (Sweet and Spicy)

    This sweet and spicy instant mango pickle has all the goodness of jaggery, and you can have this guilt-free if you are conscious of sugar intake. It gives an incredible taste.

    Spring and summer season is the specific time when market is flooded with raw green mangoes. In India, there are different varieties of mangoes. The pickles are prepared from raw mangoes. Normally pickle is made with process of drying and fermenting the mangoes, that is a long process of a few weeks. But, you can make instant version of pickle and store in refrigerator for a few weeks. This instant pickle has a sweet, savory, spicy combination of all flavors.

    Sweet and Spicy Instant Mango Pickle

    Ingredients

    Raw mangoes

    Jaggery - substitute sugar

    Vegetable oil

    Spices - Dry Red Chilies, Coriander Seeds (dhania) + Cumin Seeds (jeera) + Fenugreek Seeds (methi) + Fennel Seeds (saunf) + Onion Seeds (kalonji) + Yellow mustard Halves (peeli rai)

    Pickle Spice Mix For Instant Pickle

    The measurements of these whole spices are as follows:-

    •  Coriander powder - 100gms
    •  Cumin seeds - 50gm
    •  Fennel seeds - 40 gm
    •  Yellow mustard seeds halves - 20gm
    •  Onion seeds - 10gm
    •  Fenugreek seeds - 10gm 

    Dry roast them slightly (for 2 - 3 minutes, stirring continuously). Cool it down to room temperature and grind to a coarse powder form. This is pickle spice mix.

    Store in an air tight container. You can use this spice mix to other stir-fried dishes too, to give them an "achari" flavor. Once you have prepared this spice mix, start preparing the instant pickle.

    Instructions:-

    Heat 3 - 4 tbsp refined oil in a pan. Add 1 tsp cumin seeds, let them crackle well. Then, add a tsp of fenugreek seeds, fennel seeds, and dry red chilies.

    After 15 - 20 seconds, add diced mangoes and mix well. Saute on high flame for 2 minutes. Add red chili powder and a pinch of salt and mix well.

    Now, add crushed jaggery or jaggery powder to the pan. Add in water and cover with a lid. Let it simmer on low to medium flame for 10 minutes.

    Stir in between and check if the mangoes are soft and cooked. When jaggery melts and cooks, they form syrup and check the required consistency.

    In the end, add pickle spice mix. Stir well. Turn off the heat when mangoes are well cooked and have the desired consistency.

    Let it cool completely, then store it in an air-tight container in the refrigerator.

    Ingredients
      

    • 1 kg raw mango peeled & diced into pieces
    • 1 kg jaggery
    • 3 tbsp Refined Oil
    • 1 tbsp Cumin seeds
    • ยผ tbsp fenugreek seeds
    • ยฝ tbsp fennel seeds
    • ยผ tsp Salt
    • 8 - 10 dry red chillies
    • 1 cup Water

    • 1 tsp Red Chilli Powder

    Instructions

    • Let it cool completely and then store in an air tight container in refrigerator.
