Spinach is a great leafy vegetable with tons of health benefits. Adding corn to the spinach makes it a yummy side dish to any of the meals. It's a great combination, too. Try my spinach corn sandwich that is too delicious.

Those who follow keto may avoid corn, but this doesn't contain a large quantity, and as keto allows a maximum of 20 -50 gms carbs, this is below the amount recommended.
This sauteed spinach corn is a variation of my earlierย sauteed garlic spinach,ย a keto-friendly recipe. Preparation of the recipe takes 5 minutes, and cooking takes 5 minutes, so this is a quick side dish.
Sauteed Spinach Corn
Ingredients required
Spinach leaves
Onion, garlic
Sweet corn kernels
Salt and crushed pepper
Oregano and chili flakes (optional)
Olive oil
Optional- Fresh cream for a creamy consistency
Instructions
Blanch spinach in hot water and then give it an ice bath (retain color and nutrition). Similarly, boil or microwave the corn kernels for 2 - 3 minutes until they turn soft.
Heat oil in a pan or skillet. Add chopped onions and garlic and saute until the onion turns translucent. Then add oregano and chili flakes and stir to mix.
Add blanched spinach leaves and steamed corn and saute for 2 - 3 minutes until the spinach and corn are infused with flavor. Once done, turn off the heat. The whole process should take 10 - 12 minutes.

Equipment
- 1 Saucepan
- 2 Mixing Bowl small
- 1 Spatula
Ingredients
- 200 gms spinach
- 2 tbsp corn kernels
- 4 - 5 garlic cloves minced or finely chopped
- 1 tsp cumin seeds
- ยฝ tsp salt or as per taste
- ยผ tsp crushed black pepper
- ยฝ tsp oregano optional
- ยผ tsp red pepper flakes optional
Instructions
- Blanch spinach in hot water and then give it an ice bath (retain color and nutrition).
- Boil corns in a saucepan for 3 minutes with closed lid. Add a pinch of salt to water while boiling. If you are using canned corns then skip this step.
- Heat 2 tsp oil in a pan. Once the oil is hot, add minced garlic and chopped onions.
- Once the onions are translucent, add oregano and chili flakes and stir to mix.
- Add blanched spinach leaves and steamed corn and saute for 2 - 3 minutes until the spinach and corn are infused with flavor.
- Once done, turn off the heat. The whole process should take 10 - 12 minutes.
Notes
- For Keto Version, Use Butter to cook the recipe. You can reduce the quantity of corn and increase spinach to lessen the carb part in diet.
