Instructions
Blanch spinach in hot water and then give it an ice bath (retain color and nutrition).
Boil corns in a saucepan for 3 minutes with closed lid. Add a pinch of salt to water while boiling. If you are using canned corns then skip this step.
Heat 2 tsp oil in a pan. Once the oil is hot, add minced garlic and chopped onions.
Once the onions are translucent, add oregano and chili flakes and stir to mix.
Add blanched spinach leaves and steamed corn and saute for 2 - 3 minutes until the spinach and corn are infused with flavor.
Once done, turn off the heat. The whole process should take 10 - 12 minutes.
Notes
For Keto Version, Use Butter to cook the recipe. You can reduce the quantity of corn and increase spinach to lessen the carb part in diet.
