Wash off and grate potatoes using a large perforated cheese grater or food processor.
Now squeeze out as much water as you can using a paper napkin.
Mix all ingredients mentioned above. (except oil)
Stir the mixture well.
Heat some oil in a pan.
When the oil is hot put 2 tbsp of batter and spread it lightly by pressing with the backside of the spoon.
Flip to other side and pan fry till both sides are golden and crisp.
Remove from oil and place on a paper napkin to soak excess oil.
Serve them hot with your favourite dip or sauce.
Air Fryer Potato Latkes
Preheat the air fryer at 400 F for 4 minutes.
Place the potato cakes in the air fryer basket.
Start the air fryer at 400 F for 7 minutes.
Then flip the latkes and again cook for 4 - 5 minutes till it's crispy and cooked.

You may keep the potatoes in ice cold water for 15 - 20 minutes. This will make it crispier. But this is completely optional. Remove all liquid out of grated potatoes by squeezing with help of a napkin or cheese cloth.Use large perforated grater for grating the potatoes.Serve them hot else it will turn chewy.
