sweet potatoes

drained and rinsed

Instructions
Firstly, preheat your air fryer at 400 F or 200 C for 4 minutes.
Rinse the sweet potatoes nicely.
Poke it with a fork.
Brush the sweet potatoes with olive oil on all sides.
Sprinkle it with salt and pepper to taste.
Arrange them in a single layer in an air fryer basket.
Air fry for 35 - 40 minutes, toss them after 15 minutes.
Bake till the sweet potatoes are cooked till fork tender and crispier skin.
Black Bean & Corn Toppings
Heat olive oil in a pan.
Add drained and rinsed black beans and corn to the pan.
Add cumin powder, paprika, lime juice along with 2 tbsp water.
Saute for 2 minutes till all spices nicely coated with beans. Remo
Remove once done.
Now add the toppings on the baked potatoes along with some sour cream. Sprinkle some fresh parsley or cilantro leaves.
