Preheat your air fryer to 400°F (200°C) for 3 - 4 minutes.
Wash the baby potatoes thoroughly clean any dirt, etc since we are not removing the skin. And pat them dry with a paper towel.
Cut the baby potatoes into halves and transfer them to a mixing bowl.
Add ice water and keep aside for 10 - 15 minutes. This will result in crispier potatoes.
Then remove from water and pat dry with a clean kitchen napkin.
In a mixing bowl, toss the baby potatoes with olive oil, salt, pepper, and seasonings. Toss to coat the potatoes evenly.
Place the seasoned baby potatoes in a single layer in the air fryer basket. Avoid overcrowding to ensure even cooking.
Cook the baby potatoes in the air fryer for about 12 minutes, shaking the basket or flipping the potatoes halfway through the cooking time.
Once the potatoes are golden brown and crispy on the outside and tender on the inside, they are ready to be served.
Once done, remove the baby potatoes from the air fryer, and transfer them to a serving dish.
Sprinkle some parmesan cheese and some finely chopped fresh herbs. Serve hot.
Notes
You can also use whole potatoes without cutting. But cutting will add flavors in a better way. No need to peel off the skin. Keep them on.Cooking times may vary by 2 - 3 minutes depending on the size of the potatoes and the air fryer model, so keep an eye on them to prevent overcooking.Avoid overcrowding to ensure even cooking of potatoes. Make in batches if required.
