Slice onions and keep them in a mixing bowl. Add a tsp salt and gently mix it with onion slices (preferably by hand). Let it sit for 10 minutes to release the moisture.
After 10 minutes, check that the onions have released some moisture. Don't remove that.
Add chickpea flour, rice flour, and spices to the bowl. Drizzle 1 tsp olive oil and mix thoroughly.
Add water gradually. It may take 4 - 5 tbsp water to make the batter of the right consistency. A too-thin consistency won't hold shape in the air fryer. The onion mixture should be thick enough.
Preheat the air fryer to 400 F for 3 - 4 minutes. Grease the basket or use a silicon mat for this recipe to avoid sticking of the fritters.
Take a spoonful of mixture and place it in the air fryer. Arrange them in a single layer.
Spray or brush them with oil.
Air fry them for 10 minutes at 350 F or 175 C. Then, increase the temperature to 400 F (200 C) and air fry for 5 - 6 minutes more.
Flip them halfway through and spray a little oil on them.
Remove when the fritters turn crispy and golden.
Serve hot with cilantro dip or any of your favorite dip.
