Now add water and simmer for another 3 - 5 minutes covering with a lid.
After 5 minutes, when stems are also well cooked along with florets, add nutritional yeast .
Then, puree it finely using a immersion blender or in a blending jar.
You may strain out the chunks using a fine mesh strainer. However this is optional.
Then simmer it for another 2 minutes.
You may add non dairy cream here to get a smooth texture. But this is optional.
Saute the kale
wash and chop kale finely.
heat oil in a pan.
Add chopped garlic and saute till translucent.
Sprinkle some salt and little water.
Simmer for 3 minutes or till it's cooked.
In the end add 1 tsp lemon juice and give it a nice stir.
Assemble and Garnish
Take out broccoli soup in serving bowls.
Top it with sauteed kale.
Garnish with some red chilli flakes and some drizzles of olive oil.
Notes
If you want a little vibrant color, you can add green food color. But that is optional. You can also add a few fresh spinach or green peas for a brighter color.
