This is a flavourful spicy rice recipe for dinner or lunch. This is one-pot comfort food (i.e. pressure cooker or instant pot) that takes less than 30 minutes.

Rinse and wash rice thoroughly and soak for 10 - 15 minutes.
Heat oil in a cooker and add cumin seeds to crackle.
Then add bay leaf, sliced onions, ginger-garlic paste and sauté till translucent.
Then add curry leaves and chopped tomatoes.
Saute for a minute. Till tomatoes are a little softer.
Now add all vegetables and mix well.
Sauté for 2 minutes on medium to high flame.
Now add goda masala, turmeric powder and red chilli powder.
Saute for a minute.
Then add soaked rice.
Add 2 cups of water, salt to taste.
Now pressure cook for 3 whistles.
When pressure released open the lid of cooker.
Add finely chopped coriander leaves and freshly grated coconut into it.
For rich flavour add 1 tsp desi ghee (clarified butter) to hot rice.
Notes
Keep the proportion of rice to water in 1 : 2 ratio. For 1 part rice, add 2 parts of water. Then on high flame for 2 - 3 whistles. The rice should not be as dry in Biryani rice recipe. It will not be mushy but still little softer in texture. If you want dry n separate rice, then add 1/2 cup less water.
If you don't have goda masala or any ingredient to make goda masala, then replace it with garam masala and add whole spices to oil before adding onions into it. (e.g. 1 bay leaf + 1 inch cinnamon, 4 green cardamom, 6 cloves, 8 black peppers)
