Ingredients

whole wheat flour
1/4
tsp
carom seeds (ajwain)
1/2

Salt

dry flour
(for dusting)

Instructions
In a large mixing bowl take wheat flour, ajwain, salt.
Add little water at a time and mix all ingredients making a dough.
Knead the dough for 5 minutes. The dough should not be very tight.
Make the dough as required for roti or paratha.
Cover with a damp cloth and let it rest for 5 minutes.
After 5 minutes make equal size roundels.
Take out one roundel and dust with some dry flour.
Now roll it to a large circle.
Now brush the top with some melted ghee. Dust some flour on it.
Spread it evenly on greased layer of paratha.
now start making plates or layers (as shown in pictures).
once the bread is layered perfectly try to stretch it a little bit. (it won't stretch much because of wheat flour).
Now roll the layered and pleated bread into a circle shape.
Next, start rolling the layered circle roundel into paratha.
Don't add any further dry flour while rolling the paratha.
Heat a tawa or pan.
Place the paratha on tawa.
When the base is done little brown and golden flip it to the other side.
Apply ghee on both sides and shallow fry till it's golden brown and evenly cooked.
Once done perfect you can see separate layers.
Remove from heat and serve with any curry of your choice.
