Sweet Potato & Tomato Soup with Crunchy Crushed Peanuts
This easy recipe is prepared from sauteed sweet potatoes and tomatoes.

peeled & chopped
Roasted & crushed roughly
Chopped or minced finely
Red Chilli Powder
Black Pepper Powder
Heat oil in a pan. add garlic and onion and saute till they are translucent.
Add chopped tomatoes & sweet potatoes. Saute for 2 minutes.
Add coriander powder and chilli powder. Mix well. Saute for a minute. Add 1 cup water and cook in low flame with closed lid.
Remove from heat once sweet potatoes are cooked completely. Blend it to smooth paste (*Recipe notes)
Heat the mixture in a pan. Add 1/2 cup water or as per desired consistency. Season with salt and black pepper. Add crushed peanuts to the soup and serve hot.
*If you are using regular blender for puree then cool it completely before blending. Else the lid will open in pressure of heat.
