Cilantro lime riceis steamed rice in the instant pot with an added flavor of lime and freshness of lots of fresh cilantro herbs. This is vegan and gluten-free too.

Dump the rice into the inner pot along with water, salt, oil, lime zest, and lime juice.
Close the lid of the instant pot and move the steam valve to "SEALING".
Start the instant pot on manual PRESSURE COOK mode.
Set time to 5 minutes at HIGH pressure.
Once it beeps, let it be at NPR for 10 minutes.
Then QUICK RELEASE the rest. Open the lid.
Fluff the rice using a spoon or fork.
Now add lots of fresh cilantro leaves finely chopped.
Gently mix them all.
Cilantro lime rice is ready to serve.

The ratio of rice to water - 1 cup rice will need 1 cup water when cooking on PRESSURE COOK mode. Though different varieties of rice may require a little more or less water. White basmati rice takes the same quantity of water, long grains may take 1/4 cup water more.If cooking on RICE mode of the instant pot, the timing is 12 minutes auto-set. And this is okay for white rice like basmati or jasmine only. For brown rice, set it manually.Also if you are trying this with brown rice, then timing and water quantity will vary too. 2 cups of brown rice will need 2 1/4 cups water. And the cooking time will be 10 minutes.The instant pot takes 8 - 10 minutes to come to pressure. Also, the time will be the same even if the recipe is doubled or tripled.10 minutes of NPR is helpful since steam will get evenly distributed. After that do remove rest pressure.
