Once the oil is hot, add the chopped ginger and garlic, then the onions. Sauté for a minute on medium heat.
Then add the diced broccoli florets and sauté for another 2 minutes, until tender. If required, add (only) 2 tbsp of water to create a steaming effect and speed up cooking. The water will evaporate while cooking the broccoli.
Then add rice on top of it.
Add soy sauce, vinegar, chili flakes, salt, and pepper to taste.
Toss everything well in high heat. Garnish with chopped fresh cilantro leaves and some toasted sesame seeds.
Instant pot method
Press the "saute" button on the Instant Pot.
Add the oil and let it heat up. Add onions, ginger, and garlic.
Sauté for a minute, then add broccoli florets (and other veggies, if any).
Stir in occasionally. Cook for 4-5 minutes, until the broccoli and other veggies are tender.
Then add rice on top of it. Add soy sauce, vinegar, chili flakes, salt, and pepper.
Stir and cook for another 2 - 3 minutes.
Add finely chopped cilantro leaves or green onions and some toasted sesame seeds.
