Sweet Potato & Tomato Soup with Crunchy Crushed Peanuts

Ingredients

  • 2 Tomatoes
  • 200 gms Sweet potato peeled & chopped
  • 2 tbsp Peanuts Roasted & crushed roughly
  • 4 Garlic pods Chopped or minced finely
  • 1 small Onion Chopped
  • 1 tsp Coriander Powder
  • 1/2 tsp Red Chilli Powder
  • 1/4 tsp Black Pepper Powder
  • 1/4 tsp Salt
  • 1 tbsp Lemon Juice

Instructions

  • Heat oil in a pan. add garlic and onion and saute till they are translucent.
  • Add chopped tomatoes & sweet potatoes. Saute for 2 minutes.
  • Add coriander powder and chilli powder. Mix well. Saute for a minute. Add 1 cup water and cook in low flame with closed lid.
  • Remove from heat once sweet potatoes are cooked completely. Blend it to smooth paste (*Recipe notes)
  • Heat the mixture in a pan. Add 1/2 cup water or as per desired consistency. Season with salt and black pepper. Add crushed peanuts to the soup and serve hot.

Notes

*If you are using regular blender for puree then cool it completely before blending. Else the lid will open in pressure of heat.
