Also it has all nutrition of green veggies like green peas, potatoes, spinach, carrots, beans, red bell pepper & yellow bell pepper. Again I would say that this vermicelli is hand made and home made.

Vermicelli biryani is an easy breakfast recipe which is healthy and kids friendly. I have added shahi biryani masala to the dish. This added extra flavor to the dish. You can add simply maggi magic masala also to the vermicelli for kids tiffin box. Since it looks like that of maggie you can replace maggie with this recipe. In many schools maggie is not allowed in tiffin box. But you can give this in place of maggie. This is nutritious and filling also.

My vermicelli is handmade by my mother-in-law. I must admire her expertise and speed in But you can anyways get that in any supermarket. Add whatever vegetable you feel your kid loves. From vermicelli you can make vermicelli upma, pulao and biryani. Although there is little difference in method and spices we use for different recipes. Also it makes great sweet dessert or pudding. This vermicelli pudding just takes 5 minutes. Infact any vermicelli dish is quick as it takes 3 – 5 minutes to get cooked.

This is a 10 minutes recipe. What else we need on lazy mornings? A breakfast that is tasty and nutritious.

Ingredients

  • 1 cup vermicelli
  • 1/4 cup green peas
  • 1/4 cup carrots
  • 1/4 cup spinach leaves
  • 1/4 red bell pepper
  • 1/4 yellow bell pepper
  • 1 medium onion
  • 1/2 tsp cumin seeds
  • 2 garlic pods
  • 4 curry leaves
  • 1 tbsp Shahi Biryani Masala
  • 1/2 tsp salt
  • 1/2 tsp coriander powder
  • 1/4 tsp red chilli powder
  • 1 glass water

Instructions

  • Boil vermicelli in a sauce pan. Add 1/2 tsp salt and 1/2 tsp oil to the pan. Boil for 3 - 5 minutes till the vermicellis are soft.
  • Strain out from water after removing from heat and wash out with cold water. This is to avoid sticking of strands together. Add few drops of oil and mix well.
  • In a pan heat oil. Add chopped garlic, onion, bay leaf (optional), cury leaves. Saute for 2 minutes till onion is translucent.
  • Add all vegetables and saute for 5 minutes they are cooked well.
  • Add vermicelli and stir well. Add all spices including salt and mix well. Cook for another 5 minutes and saute well.

Vermicelli Pudding from Homemade vermicelli

Vermicelli pudding is one dessert which are very common in every house in India. This is easy to make and readily available in market. It takes hardly 10 minutes to prepare 4 servings of this pudding. It tastes great when chilled. Our food menu does not complete without desserts. Since this is an easy option and tastes equally great I prefer making this pudding for my family. Only one step is boil the vermicelli in milk for 10 minutes till they are soft. Add sugar and chopped dry fruits. That’s it. Your sweet dish is ready now. You can add 1 tsp ghee or purified butter to this. But I prefer to keep it simple without ghee. These vermicellis are roasted and hence does not require further sauteing.  If you are using market bought ones then first fry for 1 minute in ghee and then add milk to it and simmer.

Yes, one thing special about this recipe is the vermicelli used here are hand made, home made by my mother-in-law. I tried learning this making of vermicelli from her this summer vacation. No doubt he has an expertise and can’t really match to her speed. “Practice makes a man perfect” so true.

Ingredients

  • 250 ml Milk
  • 2 fistful Vermicelli
  • 1/2 cup Water (optional)
  • 1/2 cup Sugar (or 6 tbsp)
  • 1/4 tsp Cardamom Powder
  • 1 1/2 tbsp Dry Fruits roughly chopped
  • 1 tsp Ghee (Optional)
  • 1 tbsp Condensed Milk (optional)

Instructions

  • Heat a sauce pan. add milk to it. add condensed milk (Optional) & vermicelli. Let it simmer till vermicelli is soft.
  • Add crushed or powdered cardamom powder, sugar as mentioned or as per taste.
  • Add chopped dry fruits and mix well. reserve some dry fruits for garnishing.
  • Keep in refrigerator and serve chilled.

Notes

  • If you are using vermicelli which are not roasted then first roast them in 1 tsp ghee/ clarified butter for a minute till they turn light brown in color. Then add milk to it and follow rest steps.
  • Don't add raisins while boiling milk else milk will curdled and spoil the dish.

I just loved this recipe vermicelli green peas pulao. When I made on lazy sunday morning for breakfast, I din’t know it will turn out with such divine taste. I had some frozen green peas. The vermicelli I have used in the recipe are again handmade (homemade). Recently I have learned this making of vermicelli from my mother-in-law when I visited hometown for vacation. I’m happy and satisfied that I learned one more skill. We made vermicelli from around 1 kg flour. No doubt I can’t match to my mother-in-law’s speed as she is an expert in this. But somehow I learned to do the same with little more time. It was time consuming task and requires patience. Someday I will share how to make this vermicelli at home.

As we know vermicelli can be used in preparing sweet dish or even savoury dish. This savoury recipe Vermicelli Green Peas, as the name describes its main ingredients are vermicelli and green peas. You can add other vegetables like potatoes, carrots, beans, cauliflower, corns or whatever you like to add. Try adding sauteed spinach for variation.

Ingredients

  • 3 tbsp Refined Oil
  • 1/2 tsp Cumin seeds
  • 1/2 cup Green Peas Boiled
  • 1 cup Vermicelli
  • 1 Onion
  • 1 Tomato
  • 3 - 4 garlic
  • 1/2 inch Ginger
  • 4 - 5 Curry Leaves
  • 1 tbsp Coriander Powder
  • 1/2 tbsp Red Chilli Powder
  • 1/4 tsp Turmeric powder
  • 1 tsp Salt
  • 1 Bay Leaf
  • 1 tbsp Shahi Biryani Masala
  • 1 tbsp Coriander Powder finely chopped

Instructions

  • Boil the vermicelli in a bowl of water till they are soft. Don't overcook them. Strain with help of colander or strainer and cool it under running water. Add salt and a tsp oil while boiling.
  • Boil green peas separately for 10 minutes simultaneously.
  • Heat oil in a pan or kadai. Put cumin seeds, asafoetida. once cumin seeds splutter add ginger garlic green chillies and saute for a minute. Add chopped onion and saute till translucent. Add tomatoes and cook for 2 minutes till they are soft.
  • Add boiled green peas to the pan and saute for another minute.
  • Add all spices, salt and mix well. Saute for a minute.
  • Add boiled vermicelli to the pan and stir well.
  • Saute for 3 - 4 minutes by stirring continuously.
  • Garnish with coriander leaves and serve hot.

Easy Vermicelli Upma | Easy Vermicelli Pulao

Vermicelli upma is similar to suji semolina upma but with a variation. Here its been prepared by vermicelli and semolina. However you can make only vermicelli upma by skipping semolina from the dish. This is an easy to make recipe and hardly takes 15 – 20 minutes to prepare. One addition along with vegetables you can add boiled soya chunks in the dish. Cut the chunks into smaller pieces.

Lets cook other semolina dishes like upma, vegetable upma, pinwheel samosa, instant vada, instant uttapam, suji halwa etc.

This is prepared with combination of semolina and vermicelli. however you can skip semolina completely.

Ingredients

  • Rava/ Semolina- 0.5 Cup
  • Vermicelli- 1 Cup
  • Refined Oil- 4-5 teaspoon
  • Mustard Seeds: ¼ tea spoon
  • Ginger- ¼"finely chopped
  • Onion- ½ finely chopped
  • Tomato- ½ finely chopped
  • Curry Leaves- 6-7
  • Green Chilli- 1 -2
  • Carrots -1 Peeled & diced
  • Green Peas- ¼ Cup
  • Potato- 1 peeled & diced
  • Salt- ¼ tea spoon or as per taste

Instructions

  • Take 1/ cup of Rava and 1/2 cup semolina and dry roast in a pan. It won’t take more than 3-4 mins. Keep on low flame to avoid burning. After 3mins remove from heat and keep in dry plate.
  • Similarly keep dry roasted vermicelli in separate bowl.
  • Heat a pan in high flame. Put 5- 6 teaspoon refined oil.
  • Once the oil is hot put mustard seeds and let them splutter.
  • After that put curry leaf, ginger, green Chilli and onion into it. Don’t over heat else onions will get burnt.
  • Add chopped tomatoes. Sauté for 1-2 mins.
  • Add chopped vegetables into it. Sauté for 2 mins.
  • Then add 1 ½ glass of water into kadai and get them to a boil. Add salt as required or as per taste. You can add a pinch of turmeric powder too if you want to give different color to it. However this is optional.
  • Cover with lid. let the vegetables simmer and cook till they are done completely, add roasted semolina & vermicelli into kadai but make sure to stir the mixture constantly else it will make lumps inside and will not get cooked evenly.
  • Let it boil for 3 – 4 mins more & get cooked properly. Now remove from heat at required consistency.
  • In the end you can add few drops of lemon and few coriander leaves to add slight tangy taste in it.
