Mix Veggie Peppercorn Weight-Loss Soup

This low carb mix vegetable peppercorn soup is a boon for those chilli cold days. Super easy and nutritious soup for my friends.

This soup is one of the healthy soup where you can add any vegetable of your choice or healthy green and orange vegetables. Why I’m calling this weight loss soup as the vegetables in this recipe are low in carb and helps in promoting weight-loss and maintenance of body weight. In this soup there are no other spices except peppercorns and salt.

I have used cabbage, carrots, bell peppers, green peas, corns. Very easy recipe and takes less than 30 minutes to prepare. You can add spinach, mushroom, babycorn, cauliflower etc. as well to the soup for some extra nutrition. The taste is divine during cold winter and monsoon days. Also they boost our immune system and keep our tummy healthy. The heat of peppercorn will keep cold and flu away in cold days. And hence highly recommended in monsoon and winters.

Ingredients

  • 1 tbsp Oil
  • 1 cup Shredded cabbage
  • 1 green bell pepper
  • 1/2 cup Green Peas
  • 1/2 cup chopped carrots
  • 1/4 cup Corn kernels
  • 2 Garlic pods
  • 1 medium Onion
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Water
  • 1 tsp corn starch

Instructions

  • Heat 1 tsp oil in a pan. Add garlic crushed and onion and saute till translucent.
  • Add all chopped vegetables and saute on high flame for 2 - 4 minutes. Add water and simmer for 5 minutes on low flame.
  • Season with salt and pepper. After 5 minutes add mixture of corn starch and water and stir well. Add 1 tsp vinegar or lemon juice to the soup. Add chopped coriander leaves (optional).
  • Serve this soup piping hot. The heat of pepercorns gives it that spicy flavor.

Creamy Spinach & Mushroom Soup

This green & creamy spinach & mushroom soup is another healthy soup from my soup bowl. As the name says it all its made from spinach and mushroom and seasoned with other light spices. Read my other spinach recipes here.

I have mentioned my other spinach soup in my earlier recipe post. However that soup has more curry taste as I had used the curry spices and onion paste to prepare that soup. But I felt like preparing some soup where spinach will dominate the flavor. But then mushroom is a surprise for the taste bud in this soup. I like mushrooms and they are extremely healthy food. Low in carb and helps maintaining weight. So isn’t a great idea to combine two superfoods for one soup. This was an easy one pot recipe. Again this will keep you full and stop food craving. The protein and fibre helps in weightloss.

 

This is easy and takes only 15 minutes to prepare this recipe. I have added swirl of curd which gave tanginess to the soup.

So lets make this super healthy and heavenly delicious soup. Add home made bread croutons to the soup and serve.

Ingredients

  • 1 tbsp oil
  • 1 cup fresh spinach leaves chopped
  • 10 mushroom
  • 1 onion
  • 4 garlic pods
  • 1/2 tsp salt
  • 1/2 tsp black pepper powder
  • 2 tbsp beaten curd

Instructions

  • Heat oil in a pan. Add crushed garlic and saute till light brown in color. Then add chopped onions to it.
  • Once onion is translucent, add chopped spinach and mushroom and saute for 5 minutes on medium high flame or till its cooked.
  • Add 1/2 tsp whole wheat flour but its optional. You may skip this. saute for another minute.
  • Turn off heat and let it cool slightly. Blend it to a smooth paste.
  • Heat pan again. Pour the puree and add 1/2 cup water and simmer for 2 minutes. Season with salt and paper.
  • turn of gas and serve the piping hot spinach & mushroom soup with a swirl of beaten curd and bread croutons.

Sweet Potato & Tomato Soup with Crunchy Crushed Peanuts

Sweet Potato & Tomato with dry-roasted peanuts, heavenly combination all together. If you love hot soups you will just love this version. You will get earthy flavors of sweet potato, tanginess of tomatoes. The soup is again spiced up with red chillies, coriander powder, onion and garlic. Sweet potatoes are healthier replacement of potatoes and are diabetic friendly. They are good for our health because of high nutrient value.

So lets start this delicious hot soup for this rainy days. The hotness (spicy) you can adjust as per your taste. I like more spicy food than sweet soups. So I have added red chilli powder, black pepper and chilli flakes. you can skip red chilli powder to the recipe if don’t want it to be more spicy. Dry roast the peanuts and grind to coarse paste. This will give that crunchy bite in the soup.

This is an easy soup which takes less than 20 minutes to prepare.

Prepare this soup in 5 step process:

  1. Clean, peel, chop and saute.
  2. Add spices and cook.
  3. Cool & grind to smooth puree.
  4. Adjust consistency by adding water/stock and bringing it to a boil.
  5. Garnish with crushed roasted peanuts and chilli flakes.

It won’t take more than 15 minutes to prepare and serve.

Ingredients

  • 2 Tomatoes
  • 200 gms Sweet potato peeled & chopped
  • 2 tbsp Peanuts Roasted & crushed roughly
  • 4 Garlic pods Chopped or minced finely
  • 1 small Onion Chopped
  • 1 tsp Coriander Powder
  • 1/2 tsp Red Chilli Powder
  • 1/4 tsp Black Pepper Powder
  • 1/4 tsp Salt
  • 1 tbsp Lemon Juice

Instructions

  • Heat oil in a pan. add garlic and onion and saute till they are translucent.
  • Add chopped tomatoes & sweet potatoes. Saute for 2 minutes.
  • Add coriander powder and chilli powder. Mix well. Saute for a minute. Add 1 cup water and cook in low flame with closed lid.
  • Remove from heat once sweet potatoes are cooked completely. Blend it to smooth paste (*Recipe notes)
  • Heat the mixture in a pan. Add 1/2 cup water or as per desired consistency. Season with salt and black pepper. Add crushed peanuts to the soup and serve hot.

Notes

*If you are using regular blender for puree then cool it completely before blending. Else the lid will open in pressure of heat.

Low-carb Green Peas Black Gram Lentils Soup

Green peas & Black gram Lentils Soup/ Indian Dal Recipe

This green peas and black gram lentil soup is a great food for weight-loss as its low in calorie and high in protein and fibres. For variation in taste and flavor, I have added green peas to the lentils. Here I have used split & dehusked black gram lentils which are white in color when raw. This dal is rich in protein like other varieties. You can take any other dal like massor (split orange lentils), moong (split & dehusked yellow lentils) to make this dish.

This lentil soup or dal soup is very filling and will keep you full for longer. Thus it adds to weight-loss.

Ingredients

  • 3 tbsp Ghee or Refined Oil
  • 1/2 cup Lentils
  • 1/2 cup Green Peas (Boiled)
  • 1 Onion finely chopped
  • 1 Tomato finely chopped
  • 5 - 7 Garlic pods crushed
  • 5 - 7 Curry Leaves
  • 1 tsp Asafoetida/ Hing
  • 3 Dried Red Chilli
  • 2 Green Chilli finely chopped
  • 2 tbsp Coriander Powder
  • 1 tbsp Red Chilli Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Salt
  • 1/2 tsp Garam Masala
  • 1 tbsp Lemon Juice
  • 2 tbsp Coriander leaves finely chopped

Instructions

  • Wash and soak the dal/ lentils for 30 minutes - 2 hrs for faster cooking. Pressure cook the dal for 5 - 6 whistles till dal is cooked well.
  • Heat oil in a pan. Add cumin seeds, hing. Wait till cumin seeds crackle. Add finely chopped onion, garlic, green chillies. Saute till they are translucent. Add curry leaves, red chillies.
  • Add chopped tomatoes and cook till tomatoes are soft and cooked properly. Add all spices mentioned above and mix well.
  • If you are not added green peas to the pressure cooker while cooking dal then boil separately. Add them to kadai and saute for 2 - 3 minutes till all spices well incorporated.
  • Add pressure cooked lentils. Mix well. Add 1 cup water if it looks very thick. Simmer for another 2 - 3 minutes.
  • Add garam masala, lemon juice and stir well. Garnish with chopped coriander leaves and serve hot.
