This potato cheese sandwich makes a great tiffin box idea. My 4 yrs old kid loves this sandwich in his tiffin box. Kids love cheese. Even we adults do love cheese. But because of fat concern we do just avoid this. But you can have this once or twice in a week. I also make potato spinach sandwich, pizza sandwich, chocolate sandwich for his tiffin box. And for a mom, happiness is when tiffin box is empty. That’s too dramatic 😉 . But yes we all want to see that child is enjoying his food. If kid is fussy eater like mine, it’s always a headache to think about interesting tiffin box ideas. So whenever my kid is happy with any dish, I feel like sharing on blog so that I can help other moms.

Though every kid has different taste and food habit, we can always try changing and inducing more healthy food habit. I have shared one more recipe of party appetizer veg seekh kabab, paneer corn seekh kabab, potato lollipop, potato bites for kid’s tiffin box , Cheesy potato croquettes recipes. And the good news is that you can prepare the mixture and refrigerate them. In morning you can just fry them or shallow fry them and make sandwich/ burger of them. Or even you can give them as finger foods. These are healthy as made from green vegetables, potatoes and cheese. So it will keep our child full for longer.

Other Kid’s Tiffin Box Ideas

I will mention here what are the other items I do give my child in his tiffin box. With age you can try more recipes. These are basically finger foods for age group 2 yrs to 5 yrs (kids and toddlers).

My kid is very fond of parathas. So I do try to give variation in that. I make aloo paratha, gobi paratha, lachha paratha, methi paratha, paneer paratha, dal paratha. Dal paratha I make because he doesn’t like dal but he likes paratha. So I knead flour in cooked dal and make paratha with that dough. In this way he gets nutrition of lentils as well. Similarly I try to stuff vegetables and paneer in paratha. And he enjoys such food. So I’m happy too. While making paratha for my kid, I use ghee instead of refined oil. Ghee is very essential for bone health and brain development of kids.

You can also give idli, dosa, other savory crepes and pancakes, poha, upma, vermicelli upma (gives feel of maggie). In many schools junk foods are not allowed in tiffin box in order to develop healthy eating habit. So you can not give maggie, pasta, pizza etc in tiffin box. So in place of maggie use substitute like vermicelli and add different veggies to it. Read my vermicelli upma and try adding vegetables you think your kid would love. Minimize or remove chilli powder/ green chilli from recipe.

Ingredients

For Stuffing

  • 2 cheese slice
  • 2 med potatoes
  • 1 small onion finely chopped
  • 1 tsp coriander powder
  • 1 tsp red chilli powder
  • 1/2 tsp chat masala
  • 1/2 tsp salt
  • 1 tsp lemon juice
  • 1 tsp coriander Leaves finely chopped

For Sandwich

  • 4 slice bread (white or multi grain)
  • 2 tbsp ghee
  • 4 tbsp green chutney (optional)

Instructions

  • Boil potatoes for 3 whistles or till cooked.
  • Remove skin and mash it completely. Add other ingredients mentioned above in ingredients list under stuffing category (except cheese slice).
  • Mix all ingredients and prepare the mixture.
  • Take 2 slice of bread and apply green chutney on one side of both slices.
  • place potato stuffing on one slice and then place cheese slice. cover it with 2nd bread. 
  • Aplly ghee on both outer side of bread sandwich and place on tawa or grill it in sandwich maker.
  • Grill till the bread turn light golden and crisp.
  • Sandwich is ready. Serve with green chutney or tomato ketchup.

Notes

While making for kids, don’t add chilli powder at all.
Also skip green chutney while making for kids.

How to make Potato Cheese Sandwich?

Boil potatoes. Peel off skin and mash it completely.

Add coriander powder, red chilli powder, chat masala, lemon juice, salt, onion, coriander leaves and mix them well. (skip red chilli powder for kids)

Apply green chutney on one side of both slices. Put stuffing on one bread and spread evenly.

Place cheese slice on potato stuffing. Cover it with 2nd slice of bread.

Apply ghee on bread and grill it or shallow fry on tawa till golden brown.

Aloo Kachori | Potato Stuffed Kachori |North Indian Style

If you belong to a North Indian Family, aloo kachori is a very familiar and loved name. I came to know about this recipe from my mother-in-law and this is her version of stuffed kachori. And I believe, this is the best one I have ever tried. Kids will also love this kachori. Even my fussy eating kid is a great fan of these aloo kachori. Poori and kachori are my husband’s favorite food too. So this is common dish which is made very often especially on weekends and a compulsory menu during any celebrations. Anyways since family loves eating and I love cooking, what a win-win situation!!

How to make Aloo Kachori North Indian Style

This is a great breakfast option or tea time snacks. We make this from whole wheat flour and hence this is healthy for our tummy also. Because of potato stuffing, this is filling as well. So if you are worried about your kid’s tiffin box, this is one of the best food item. It doesn’t take much time also to prepare. Only thing you need to take care is boil potatoes and cool it completely before using.

Aloo Kachori

Potato stuffing you can prepare by mixing mashed potatoes with other spices or by sauteing them with spices. But in that case again you need to cool it completely. You can add finely chopped onions, minced garlic, finely chopped green chillies and coriander leaves with the stuffing masala.

I have used boiled potatoes and added the spices to it before stuffing. My mom doesn’t even need rolling pin to make this aloo kachori. She is an expert in making it or say rolling it with her palms only. Isn’t it great. However I do use rolling pin to make circles. Don’t make in large size as it may make the layer very thin and stuffing may come out. When using rolling pin, don’t press it very hard. roll it with light hand so that edges will not open up with stuffing.

Another important step is making soft dough. Use fruit salt or Eno along with curd for dough of kachori. I use Eno and hung curd. You can use home made curd also. This makes the layer soft and crispy at the same time. Then knead it well. Leave it covered for 5 – 10 minutes before starting.

Serve these aloo kachori with tea as tea time snacks or with plain curd / raita for breakfast. Even with raita or green coriander chutney, it tastes equally great.

This is made by stuffing spiced potatoes in whole wheat flour breads and then deep fried. This is soft and crispy and very filing dish. Serve with tea or with curd or any curry.

Ingredients

For Dough

  • 1 cup Wheat flour
  • 2 tbsp thick curd
  • 1/2 tsp Eno or fruit salt
  • 1 tsp Salt
  • 2 tbsp Refined Oil
  • 1/2 cup Water

Stuffing and frying

  • 4 medium Potatoes
  • 2 Green Chillies finely chopped
  • 2 tbsp Coriander leaves finely chopped
  • 1 tsp Coriander Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Lemon Juice
  • 1/2 tsp Salt

Deep frying

  • 1 cup Refined Oil

Instructions

  • In a mixing bowl, add flour, curd, fruit salt, oil. mix them together. Add water slowly and gradually and knead a soft dough.

  • Take out small balls from the dough.

  • Take boiled potatoes, peel out the skin and mash them thoroughly. You can grate them also.
  • Mix all ingredients mentioned under stuffing category in ingredient list.

  • Mix them completely. Adjust salt as per taste.
  • Now from the dough take out small balls. apply oil on rolling pin and board and make a small circle. Take out half teaspoon stuffing masala and place on centre. Close it from all ends towards centre and press lightly.

  • Then with help of rolling pin roll the stuffed ball into small circle like poori.

  • Heat oil in a kadhai. Put the rolled kachori into hot oil.

Mini Rava Dosa/ Mini Semolina Pancakes for Kids Tiffin Box

Mini rava dosa is a healthy breakfast item. From the name you can guess the hero ingredient here is Rava or Semolina.

The batter for this recipe is prepared by mixing semolina with beaten curd. You can mix vegetables to the batter. I have added onion and bell peppers (red, yellow, green) and tomatoes. You can also add coriander leaves and green chillies but I have skipped chillies (kids recipe). You can also add grated carrots or grated boiled potatoes to it. This is tasty and has nutrition of veggies.

So for them it’s a time consuming process. You can’t expect your 3 yrs old kid to finish a two bread sandwich in 4 – 5 bites. They will take more time than a kid of 5 years. So we need to decide what type of food he would love and enjoy.

I will share my experience and ideas. My kid loves dosa and paratha stuff. So I make dosa from regular lentils batter, wheat flour, semolina, rice flour, ragi flour, buckwheat flour etc. And he loves all of them. He has no idea if it’s same dosa or different, but enjoys the varieties.

Similarly he does not like dal. but we mothers know how important is this for their development. So I make dal paratha with dal. Sometimes I stuff potatoes because he loves aloo paratha very much.

Ingredients

  • 3 tbsp Oil
  • 1 Onion
  • 1 Tomato
  • 1/2 Green Pepper
  • 1/2 Red Pepper
  • 1/2 Yellow Pepper
  • 1/4 tsp Salt
  • 1/4 tsp Cumin powder
  • 1 cup Semolina
  • 1 cup Beaten Curd
  • Water (As required)

Instructions

  • Add semolina and beaten curd and mix well. Keep aside for 15 minutes so that semolina will soak the moisture.
  • The batter becomes thick as semolina will soak moisture. Add chopped onion, tomato and bell peppers and mix well.
  • Add cumin powder and salt and mix well and keep aside for 5 minutes more. Add 2 - 3 tbsp water more if its very thick. Mix well and prepare thick flowing batter.
  • Heat a non stick pan. Put 1 tbsp oil. Put 1 laddle (large spoon ful) batter on it. If the batter is not thick then it will flow to spread.
  • Flip the other side with help of a spatula and cook for another 2 - 3 minutes.
  • Remove from heat and serve with tomato ketup or any sauce of your choice.

Look at this colourful vermicelli biryani. Tempting!!

Also it has all nutrition of green veggies like green peas, potatoes, spinach, carrots, beans, red bell pepper & yellow bell pepper. Again I would say that this vermicelli is hand made and home made.

Vermicelli biryani is an easy breakfast recipe which is healthy and kids friendly. I have added shahi biryani masala to the dish. This added extra flavor to the dish. You can add simply maggi magic masala also to the vermicelli for kids tiffin box. Since it looks like that of maggie you can replace maggie with this recipe. In many schools maggie is not allowed in tiffin box. But you can give this in place of maggie. This is nutritious and filling also.

What are other vermicelli dishes we can make?

My vermicelli is handmade by my mother-in-law. I must admire her expertise and speed in But you can anyways get that in any supermarket. Add whatever vegetable you feel your kid loves. From vermicelli you can make vermicelli upma, pulao and biryani. Although there is little difference in method and spices we use for different recipes. Also it makes great sweet dessert or pudding. This vermicelli pudding just takes 5 minutes. Infact any vermicelli dish is quick as it takes 3 – 5 minutes to get cooked.

This is a 10 minutes recipe. What else we need on lazy mornings? A breakfast that is tasty and nutritious.

Ingredients

  • 1 cup vermicelli
  • 1/4 cup green peas

Instructions

  • Boil vermicelli in a sauce pan. Add 1/2 tsp salt and 1/2 tsp oil to the pan. Boil for 3 - 5 minutes till the vermicellis are soft.
  • Strain out from water after removing from heat and wash out with cold water. This is to avoid sticking of strands together. Add few drops of oil and mix well.
  • In a pan heat oil. Add chopped garlic, onion, bay leaf (optional), cury leaves. Saute for 2 minutes till onion is translucent.
  • Add all vegetables and saute for 5 minutes they are cooked well.
  • Add vermicelli and stir well. Add all spices including salt and mix well. Cook for another 5 minutes and saute well.

When holidays are over and schools reopened we tend to think what to pack in tiffin box for kids. There are many kids friendly foods especially of their choice. Kids are normally very choosy when it comes about eating. My kid is a fussy eater. So more tension for mothers. We need to develop a healthy food habit for our kids.

When my son crossed 6 months I started giving him pureed vegetables, pureed khichdi, porridge. But when he developed taste bud and came to know what food he is eating he became very choosy about foods. Again year on year food habits also changes. Some year you may notice he loves a particular food and some other day he/she may not like that food at all. More than anything they need variety. So we need to think about different tiffin box ideas.

This potato bite recipe is very easy. Kids need more carbs as compared to adults as they need more energy punch during their growth period. Green veggies look boring to them and love fast food. We should brilliantly incorporate mix vegetables into their food they love. But for a change you can always give them these cheesy potato bites.

Spinach Corn Sandwich

Something very close to my heart!! Spinach corn sandwich!! This sandwich is one of my favorite sandwich. The story of being nostalgic goes like this.

Near my home there was a Crossword book store and a cafetaria (CCD). It used to be my daily routine that after office hours or even on holidays I used to go to crossword, read there for sometime, pick a book then straight to CCD to grab my favvv Spinach Corn Sandwich and a cup full of Cappuccino. I never got bored of that combination.

This is healthy and your kids will love this yummy sandwich. You may add extra cheese to this. To make it even more healthy replace all purpose flour with wheat flour or almond flour. Serve hot with any kind of sauce of your choice.

Ingredients

  • 1 tbsp Butter
  • 1 cup Spinach leaves Washed and chopped
  • 1 cup Corn kernels Boiled in salt water
  • 1 small Onion finely chopped
  • 2 Garlic pods
  • 1 cup Milk
  • 1/2 tsp All purpose flour/ Maida
  • 1/2 tsp Salt
  • Bread Slice as required
  • 5 tbsp Ghee (for buttering the outer layer of breads
  • 1 tbsp Chilli flakes (for garnishing)
  • Ketchup/ Green chutney to serve

Instructions

  • Boil the corn kernels in salt water till they are cooked. Or pressure cook for 1 whistle.
  • Heat 1 tbsp butter in a pan. Add chopped garlic and onion and saute for a minute. Add corn kernels and chopped spinach leaves.
  • Saute till spinach half cooked. Sprinkle the flour and saute for another minute.
  • Add 1 cup milk and mix well. Season with salt. Simmer till the mixture is thick as shown in picture. You may add water in sted of milk but milk gives that extra creamy texture.
  • Take out from heat and transfer to another plate to cool the paste.
  • Take out bread slice and with help of a spoon apply the paste on one side of the bread. Cover it with another slice.
  • Apply ghee/ purified butter on one side and place it on a flat pan or tawa or grill pan. Apply ghee on other side of slice and turn it carefully with help of a straight spatula. While applying ghee/ butter on bread press it gently so that they will not separate.
  • Remove from heat when turns light brown in color and serve with chutney or ketchup. For spicy, sprinkle chilli flakes on the sandwiches.

Notes

  • Add extra cheese slice to the sandwich for more cheesy taste.

Tomato Omelette is a vegetarian omelette and gluten free recipe. Sometimes I think “why this is called as omelette?” Because when we say omelette, what comes to our mind is “eggs”. May be the same color or so. If you know the answer of this “why” then please comment below.

This is vegetarian version of omelette. This is made from gram flour. Tomato being the main ingredient the name is tomato omelette. In hindi its called as Chilla or cheela or Besan ka chilla. Same chilla can be made from other flours as well like moong dal chilla, aate ka chilla, sprouts chilla etc. Basically these are crepes or savory pancakes made from flours which are flavoured with onion, tomato and other aromatic spices.

While making tomato omlette we can also add variation to it. Like instead of tomato grated potato or grated boiled potatoes are used and they are crispier and tasty dish.

Serve these chilla with breads as sandwich. This will be more filling. I make these tomato omelette sandwich for my kid’s tiffin box.

Ingredients

  • 1 cup Gram flour/ Besan
  • 1 tsp Salt (or as per taste)
  • 1 tsp Ginger garlic (crushed finely)
  • 1 Onion finely chopped
  • 1 large Tomato finely chopped
  • 2 tbsp Coriander– 1tbsp chopped finely chopped
  • 2 Green Chilli finely chopped
  • 2 tsp Coriander Powder
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Hing or asafoetida

For Shallow frying

  • 6 - 7 tbsp Refined Oil

Instructions

  • Mix all ingredients mentioned above (except oil) in a large mixing bowl.
  • Add 1/2 cup water gradually and stir well. Make a  smooth flowing batter. Make sure the batter is lumps free. 
  • Keep the pan on medium flame. Put one tbsp oil on it. When oil is hot put one ladle batter on it and spread evenly and lightly so that it won't break.. 
  • Cook it on low flame else it will turn brown at bottom without getting cooked evenly. it will take time to cook properly
  • Drizzle some oil from surrounding and let it turn color slightly on top of cheela.
  • Flip it to the other side. Let it cook for 3 mins more.
  • Remove from heat if it’s done completely. One tomato omelette will not take more than 5 minutes to get cooked in low to medium heat.
  • Garnish and serve with coriander chutney or tomato ketchup and bread toast.

Notes

The batter should not be very thick or very watery.

Onion Potato Poha | Kanda Batata Poha | Easy Breakfast Recipe

Poha is one of the healthiest breakfast dish. This dish is popularly known as kanda poha (onion poha). Originally this is a popular maharashtrian food item. However this is equally loved in other parts as well. This is made from flattened rice known as poha. This onion potato poha or kanda batata poha is similar to the authentic kanda poha except for the potatoes I love to add. Adding potatoes makes the breakfast more filling. This makes an wonderful kid’s tiffin recipe as well.

I add potatoes and green peas to my poha. Fried peanuts are also important ingredient of poha. You can add grated coconut. However I don’t like coconut on poha so i have not added it. Rather I like to sprinkle some bhujia sev or finely chopped tomato and onion on top of it. Well this is called as kanda poha because onion or kanda is the main ingredient in this recipe.

This onion and potato poha is excellent breakfast or tiffin box recipe for kids because poha is high in carbohydrate. So it helps in creating energy for our super-active kids. Also poha is easily absorbed and easily digestible. So it keeps tummy happy and full for longer.

Tips to prepare perfect onion and potato poha / kanda batata poha

1. Poha is one of the simplest recipe. It doesn’t require much preparation and hard work. Only thing you need to do is wash poha and leave it on a colander or stariner for 5 minutes. This will soften the poha flakes.

2. But don’t soak in water. Just wash it off and spread on a dry plate or colander or strainer.

3. If you will soak it in water, then it will be moist with excess water while cooking. in such case dish will be mushy and this will spoil the taste of it. Poha should be fluffy and soft.

4. If you feel it’s not wet enough (and soft) and little stiff, sprinkle some more water and keep aside for 2 – 3 minutes before adding anything.

5. I shallow fry peanuts first and then remove them from oil and add in the end. I do this because, by the time potatoes gets cooked, peanuts will be burnt and will not taste good.

6. Another thing I do, After adding mustard seeds I add chopped potatoes and cook on low flame for 5 minutes or till it’s cooked. Then I add onion and saute. Else by the time potatoes get cooked, my onion turns brown and I don’t like that burnt onions in my poha. Otherwise you can use boiled potato cubes for this recipe.

7. Add lemon juice for better taste. I like this which finely chopped onion and tomatoes on top of it. garnish with handful of coriander leaves.

Ingredients

  • Poha / Flattened Rice - 1 Cup
  • Refined Oil - 4-5 tbsp
  • Peanuts – 1 Tbsp
  • Mustard Seeds- ¼ tsp
  • Onion- ½ sliced
  • Potato – 1 diced
  • Curry Leaves- 6-7
  • Green Chilli- 1 -2
  • Turmeric – ¼ tsp
  • Salt- ¼ tsp or as per taste
  • Lemon juice 2 tbsp

Instructions

  • Take 1 cup of poha and wash it properly and keep it aside to dry for some time. Then add salt as per taste to the washed poha and mix gently.
  • Put a kadai on gas top & put 3 - 4 table spoon refined oil. Fry the peanuts and remove them once reddish brown. But take care not to overdo as they will give burnt taste.
  • Add 2 Tbsp oil to it. Once the oil is hot put mustard seeds and let them splutter.
  • After that put curry leaf, green chilli and onion into it. Add diced potato and cover with lid. Keep on low flame.
  • Once potatoes are properly cooked, add 1/2 tsp turmeric powder and mix well. After that add soaked and washed poha into it.
  • In the end add fried peanuts, coriander leaves and one/ two table spoon of lemon juice in it.
  • Sprinkle 5-6 drops of water and place the lid on kadai.
  • Then after 1min remove the pot from gas stove. Now poha is ready to serve.
