Wheat Flour Dosa | Instant Atte Ka Dosa | Whole Wheat Crepes

Atte ka dosa is very easy to prepare. When we think of making dosa, it’s very time consuming as we need to soak rice and lentils for 5 – 6 hrs. And then we need to keep the batter for fermentation. So lots of preparation required for regular dosa which is prepared from mixture of rice and urad dal.

Whereas this wheat flour crepes or atte ka dosa is so quick and it’s made instantly within 5 minutes. Since it’s made from whole wheat flour, it’s healthy as well. This recipe makes a great tiffin box idea for kids. You can serve these instant dosa with any chutney or sauce or any curry. I love this with white peas curry.

How to make instant wheat flour dosa?

This dosa doesn’t require any preparation or fermentation. Instantly you can make in 5 minutes. I have added wheat flour 1 cup, rice flour 1/2 cup and semolina 1/4 cup to make this dosa crispy. Add curd and make smooth batter. In the end add eno or fruit salt or baking soda. This is optional.

Adding eno makes the dosa little more crispy. But you can skip adding eno or soda if you are making for kid’s tiffin box. Make a smooth flowing batter. Spread on hot greased tawa. Since I have made this for my kid I have not added any soda or eno to it.

Don’t heat the tawa more because it will be difficult to spread the batter on tawa.

If you want to make soft dosa then make the batter little more flowing consistent and then put ladleful of batter on hot tawa. In this case you don’t need to spread the batter on tawa. Since it’s flowing consistent, it will spread automatically.

Ingredients

  • 1 cup whole wheat
  • 1/2 cup rice flour
  • 1/4 cup semolina
  • 1 tsp salt
  • 1/2 tsp eno
  • 1 cup water
  • 6 – 8 tbsp refined oil
  • 2 tbsp curd

Instructions

  • Take a mixing bowl. Mix all flour, salt and curd in a bowl. 
  • Add water slowly and gradually mixing nicely. Make sure it’s lumps free.
  • heat 1 tsp oil in a dosa tawa or flat pan. 
  • spread oil on whole pan with help of a tissue or paper napkin. You can use brush also for this.
  • Put one ladle full of batter and spread quickly.
  • When the bottom will get cooked, flip it to other end lightly.
  • This will take 2 – 3 minutes hardly. 
  • Remove from heat and serve with chutney or ketchup.

Notes

If you want to make soft dosa, then take only wheat flour and semolina. Make a batter with curd or buttermilk.

Dahi Aloo Recipe| Fasting Recipe | Vrat Recipe

This is one of the most popular fasting or vrat recipe during Navratri. Dahi aloo or dahi wale aloo sabzi is basically a potato dish which is cooked in curd as gravy and other spice mix.

This is a popular dish in North India especially as Navratri is one of the major festival in North India where many people observe fast for 9 consecutive days. This is not easy to fast for 9 days. There are few food option available during these 9 days. Potato is one of those vegetable which is allowed to consume on such days.

So this is one of my ultimate dish on fasting days. You can make this as a combo meal with kuttu or singhada puri, sama chawal khichdi. This infact completes the menu and keeps you full. Also it’s tangy, spicy and aromatic. So you will not crave for any outside food too.

If you are making on normal days, there is not much difference to the recipe in fact. For fasting or vrat recipe, add vrat namak or sendha namak (rock salt) which is allowed to eat on fasting days. You can’t consume regular salt if you are observing fast on any day.

How to make dahi aloo or vrat wale dahi aloo?

Dahi Aloo is a quick and easy recipe also. It won’t take 30 minutes altogether to make this quick recipe. This is a no onion no garlic dish. Again we are not adding tomato also in this curry preparation. This is prepared with minimal ingredients.

Again different families follow different set of rules while observing this fast. So you can remove those ingredients which you think is not allowed at your place.

Tips for perfect dahi wale aloo sabzi

1. Use boiled potatoes for this recipe.

2. To make the gravy thicker, mash one potato roughly.

3. Also whisk curd to avoid curdling of curd.

4. Another thing to take care of when you are making any curd base gravy, keep stirring continuously till it starts to boil. Else it will curdle.

5. And add salt after it starts boiling.

Ingredients

  • 4 potatoes boiled
  • 1 cup curd whisked
  • 1 tsp cumin seed
  • 1 inch ginger finely chopped
  • 1/4 tsp hing (asafoetida)
  • 2 tsp coriander powder
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 2 tbsp coriander leaves finely chopped
  • 2 green chillies finely chopped

Instructions

  • Boil potatoes for 3 – 5 whistles or until cooked soft. After lid opens peel off the skin and dice them. mash 1 potato roughly.
  • Heat oil in a pan. add cumin seeds and let it splutter.
  • Add chopped ginger, green chillies and all spices. Stir for 10 – 15 seconds.
  • Add whisked curd to the pan and stir continuously.
  • Add a cup of water and keep stirring.
  • Stir until it starts to boil. Then add diced and roughly mashed potatoes.
  • Season with salt and simmer for 5 minutes on medium flame.
  • Turn off heat. Garnish with fresh coriander leaves. 
  • Dahi Aloo is ready to serve.

Notes

If you are not making for fasting or vrat recipe, then add crushed kasuri methi (dried fenugreek leaves) and a pinch of garam masala.
For Vrat recipe use rock salt in sted of normal iodised salt.
If any spice (turmeric powder / hing/ red chilli powder / coriander powder ) is not allowed at your place then skip that.

This is another quick dish and healthy as well. I love this combination and really colourful vegetables on my plate. The simpler the dish the lesser time it takes to prepare. I have used carrots, potatoes, green peas, french beans, green onions for this recipe. You may add any other vegetables like cauliflower, brussels sprouts etc. To give this a protein punch add paneer to the preparation. This tastes best of it’s kind and goes well with any breads, chapati/ paratha or even with dal rice.

If you want to make it low carb or keto for diet food then just use beans, carrots, cauliflower, broccoli and remove carb veggie like potatoes and green peas.

If you have left over rice or cooked rice, you can add that to the preparation to make mix veg fried rice. And the taste of that is also awesome. In fact that’s one way to make veg fried rice. Vegetables you can choose. Add paneer or tofu (for vegans).

Ingredients

  • 2 tbsp Oil
  • 2 cup green french beans
  • 4-5 Potatoes peeled and chopped
  • 1/2 cup Green Peas
  • 1/2 cup green onion
  • 8 Garlic pods
  • 2 medium Carrots peeled & chopped
  • 1 tsp Cumin seeds
  • 1 tsp Cumin Powder
  • 2 tsp Coriander Powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Salt
  • 1/2 tsp dry mango powder
  • 1 tbsp Coriander leaves finely chopped

Instructions

  • Chop vegetables in equal size (approximately).
  • Heat oil in a pan. add cumin seeds and let them splutter.
  • Add hing or asafoetida. Put chopped garlic to the pan and saute till light brown. Add chopped onion and saute till translucent.
  • Add chopped vegetables into the pan. Add 1/2 tsp salt and cover with a lid. Don't add water to it. Veggies will get cooked in steam only. Stir occasionally.
  • It will take 5 minutes to get the veggies cooked properly. Don't over cook them as it will make the dish mushy.
  • Add coriander powder, cumin powder, red chilli powder, turmeric powder, aamchur powder and give it a quick stir.
  • Cover with lid and again cook for 2 minutes on low flame. Check with a spoon if the potatoes are cooked or not. Cook till vegetables are just cooked and with a crunch.
  • Increase the flame and cook them for another 1 minute with continuously stirring. Add chopped coriander leaves and serve hot

Masoor Dal

Dal is a staple food in India. You can have this as soup, as main course with roti (flat bread) or with Rice. Its high source of protein and fiber. You will find large no of variety of lentils. Masoor dal is normally lighter and pink or light orange in color. But whole masoor or sabut masoor is light greenish brown or brown in color. These are the outer skin of lentils. Where as orange ones are split and dehusked masoor dal.

I try to make different types of dal each day. This adds variety to our meal. Again the different tampering adds additional flavor to the lentils. Regular tampering consists of cumin seeds and ghee along with other ground spices. Also hing or asafoetida plays an important role in any dal preparation as this adds that extra boost in flavor. But if you will add more of spices then it will dominate the taste of lentils.

But there are recipes which are cooked with spices. Read recipe of Dal Makhani. Adding spices to the lentils preparation makes this dish aromatic and more flavorful. So I love it that way also.

How to make whole masoor dal?

When I make orange (split) masoor dal, I prefer to make it simple with tadka of ghee, cumin seeds, garlic, red chilli and corinader powder. Also I love to add a fist ful moongdal to the masoor dal preparation. Moong dal makes the consistency little thicker. Read my moong masoor dal recipe here.

But when it comes to sabut masoor dal or sabut urad dal, it tastes great with aromatic whole spices also. So I do make a curry paste of whole spices. This won’t be time taking as well.

I made a puree of following ingredients: 2 onion + 2 tomato + 1 inch ginger + 6 garlic + 1 green chilli + 1 inch cinnamon stick + 4 cardamom (elaichi) + 4 cloves + 8 black pepper + 2 tsp coriander powder + 1 tsp red chilli powder + 1 tsp Cumin powder

Then shallow fry this paste in ghee or refined oil (along with bay leaf) till it leaves oil from sides and cooked. Then add boiled masoor dal to the masala. Simmer for few more minutes so that the spices will be well absorbed.

This is easy and quick recipe also. Since it’s curried it makes a wholesome dish itself. You can add few vegetables if you want to make it more healthier soup. Read my Mexican Lentils Soup which was a combination of brown lentils and exotic veggies.

If you don’t like taste of whole spices, you can skip adding cinnamon, cardamom, cloves, black pepper. Rest method will be same.

Ingredients

  • 1 cup whole brown gram lentils (masoor dal)
  • 1/2 tsp turmeric powder
  • 1 tsp salt or as per taste

Preparation of Curry Paste

  • 2 onion
  • 2 tomato
  • 1 green chilli
  • 1 inch ginger
  • 6 garlic pods
  • 1 inch cinnamon stick
  • 4 cardamom
  • 4 cloves
  • 6 black pepper
  • 3 tsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp cumin powder

Final Preparation

  • 3 - 4 tbsp ghee or refined oil
  • 1/2 tsp hing
  • 1 bay leaf
  • 1 tsp salt
  • 1 tsp dry roasted kasuri methi (powdered)
  • 4 - 6 tbsp coriander leaves (chopped)

Instructions

  • Wash and soak dal in water for 30 minutes. 
    Masoor dal
  • Then pressure cook in 1 glass water (add salt and turmeric powder) for 3 - 4 whistles. 
  • Let it cool and then open the lid. Don't strain out water even if it's not mushy.

  • In the mean while prepare the puree or paste with all ingredients mentioned under "preparation of curry paste" section above.
  • Heat ghee or oil in a deep pan or kadai. 
  • Add bay leaf and wait for 10 - 15 seconds so that it will be aromatic.
  • Then add the prepared curry paste and saute.
  • Add salt and cover with a lid for faster cooking. Stir in between.
  • Or saute without covering the pan. Cook until it becomes brown and leaves oil on sides.
  • Once this paste is cooked well, add boiled dal to the pan and give it a good stir. If required add 1 cup water more.
  • Simmer it for 5 - 7 minutes. Add crushed roasted kasuri methi. Stir occasionally.
  • Turn off heat and garnish with chopped fresh coriander leaves and 1 tbsp ghee on top and mix.
  • Masoor dal is ready. Serve with rice or roti or as soup.

This one pot dish dal khichdi is a life saver for those who wants a quick dish, who wants light meal. I love dal khichdi because it’s a quick and mildly spiced dish. Sometimes it’s tiring to cook whole meal after coming back late from work. So my all time favorite for those tiring days is my life saver meal “dal khichdi“. And this is such a tasty meal that you can not say no to it anytime. I never got tired of this dish. In this easy dish dal & rice are cooked together.

How to make Moong Dal Khichdi

Normally its made with split green gram lentils (hara moong dal) which are nutritious in many ways. Read about green gram here! and other green gram recipes here! However you are free to use lentils of your choice. Here I have taken yellow lentils (Yellow Moong). It takes lesser time to cook this dal. So there are three ways you can make this dish quickly. i.e. pressure cook for 1 whistle or make in open vessel (with or without lid), or even in instant pot. This recipe won’t take more than 15 minutes for the whole process.

When it comes to consistency of khichdi it depends how you would like it to be. I like more soupy consistency. Moong dal becomes thicker after sometime you make. So add little more water. You can make it to thick consistency but my advise don’t make it more thick. It tastes even better in medium thick consistency. Ratio of water & rice+dal is 4 : 1 for khichdi (Medium liquid consistency). I make it 5:1 ratio for soupy consistency.

Variation to Indian Dal Khichdi

Similarly instead of rice you can use quinoa or crackled wheat (dalia) to make khichdi. I have come across one nice dalia khichdi recipe from foodies terminal blog. You may love to try that recipe also. That was also one quick recipe made in instant pot.

Khichdi literally means “Mixed”. So if you want to mix any vegetables to it you can absolutely do it. In this recipe I have taken only rice and dal. This is basic dal khichdi. You can add potatoes, green peas, green beans, carrots, beet root to it.

If you are suffering from stomach upset or any such ailment, then might be this is the best food and that’s why our doctors too advise to have this meal for 2 – 3 days. But here you can limit the spices to cumin seeds only.

You may love to make some accompaniments of curd along with khichdi e.g. boondi raita, carrot raita, dahi baingan or some side dish like fried ivy gourd, shallow fried potato fingers (aloo bhujia), Aloo parwal fry and so on. But trust me only plain raita or buttermilk is also enough with any khichdi.

Ingredients

To Pressure Cook

  • 1 cup Rice
  • 3/4 cup Dal
  • 1 Tomato Chopped
  • 1 tsp Salt
  • 1/2 tsp Turmeric powder

Tampering

  • 2 tbsp Ghee or clarrified butter
  • 1/4 tsp Asafoetida Powder
  • 2 Green Chillies
  • 1 tsp Cumin seeds
  • 1/2 tsp Ginger Crushed or grated finely
  • 3 Garlic pods Chopped or minced
  • 4 Curry Leaves
  • 1 tbsp Coriander Powder
  • 1/2 tbsp Red Chilli Powder

Instructions

  • Wash dal and rice thouroughly & if possible soak for 10 minutes in water. Put them in a pressure cooker. Add salt and turmeric powder. Add chopped tomatoes.
  • Add water as per the consistency required. The ratio+ (Dal+Rice) : Water should be 1:4.
  • Pressure cook for 2 whistles. Wait till cooker opens up and then prepare the tampering.
  • heat a small pan. put ghee on it. Once ghee is hot add asafoetida powder and cumin seeds and let it crackle. keep flame on low. Add chopped garlic, ginger, green chillies, curry leaves. Saute for a minute till they turn light brown.
  • If oil or ghee is excess hot then turn off the gas and immediately add red chilli powder, coriander powder. Mix well. Add the tampering to the pressure cooked khichdi. Mix well and serve hot.

Green Moong Dal Soup

Green Moong Dal Soup

Green whole moong bean (Green gram bean) is used both in savoury and sweet dishes. This dal is rich in protein and dietary fibres. This is best served with roti/ chapati (flattened bread) or steamed rice or jeera rice (cumin rice). Moong dal or green moong dal is one of the best when you are on diet for weightloss or even better for diabetic patients. 

This is healthiest form of plant protein and has amino acids which are considered as building blocks of protein. These are high source of nutrients including manganese, potassium, magnesium, copper, zinc and vitamin B. It’s rich in protein, and dietary fibre. This lentil is low in carbohydrates which differentiates it from the other lentils. Due to low glycemic index
this is one of the super foods for diabetic patients as it helps in regulating blood sugar.

How to make hara moong dal?

I make hara moong or green gram in two ways, i.e. both as dal and as curry. Preparing any of them is easy and almost similar. Incase of dry curry, then don’t add water while sauteing with spices and simmer till it’s of thicker consistency. Where as if you want to make as dal, add approximately 1 glass – 1.5 glass water more to the curry preparation.

Normally even if I want to make soupy dal consistency, I don’t add much water during pressure cooking. Keep the ration 1 : 2.5 for lentils to water. With excess water it may spill over and will not get properly cooked. Another point is cook on medium to low flame so that the lentils will get cooked properly.

Hara Moong Dal

Then if you want to make it dry sabzi, don’t add water or add little water. Even you want soupy dal, add extra water during this point (after mixing cooked dal to the spices paste).

So the basic difference is their consistency. Rest all methods are same for both dry curried lentils or soupy lentils.

Note: Soak the dal for 3 -4 hours to get full nutrition of it. It will help reducing anti nutrients which are naturally present in all beans and legumes. This makes it easier to digest and reduces flatulence.

  • 1 inch ginger finely chopped or crushed
  • 6 garlic pods finely chopped or crushed
  • 2 green chilli finely chopped
  • 3 tsp coriander powder
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1 tsp salt
  • 1 tsp cumin seeds
  • 6 – 8 curry leaves
  • 1/2 tsp hing
  • 2 dried red chilli
  • 2 tbsp coriander leaves
  • 3 tbsp refined oil/ ghee
  • 1 tbsp ghee (optional)

Instructions

  • Wash dal properly and soak in water for 1 hr. 
  • Put in a pressure cooker. Add turmeric powder and salt as per taste. Add 2 cups of water.
  • If soaked earlier then pressure-cook for 4 – 5 whistles. Else it might take 4 – 5 whistles more. Let it cool before opening the lid.

For Dry Moong Curry

  • Heat 3 tbsp refined oil in a deep pan or kadai. 
  • Add cumin seeds and let it crackle. Then add chopped ginger and garlic and saute for a minute. 
  • Add chopped onion, green chillies and curry leaves to it and saute till translucent.
  • Then add chopped tomatoes and saute for 2 minutes more or till oil separates.
  • Then add dry spices and mix well. Add 1/4 cup water and give it a good stir.
  • Add boiled dal to the pan and let it simmer till desired consistency received. Add 1 tsp lemon juice and mix well.
  • Garnish with chopped coriander leaves and serve.

For Moong Dal/ Soup

  • Heat 3 tbsp refined oil in a deep pan or kadai. 
  • Add cumin seeds and let it crackle. Then add chopped ginger and garlic and saute for a minute. 
  • Add chopped onion, green chillies and curry leaves to it and saute till translucent.
  • Then add chopped tomatoes and saute for 2 minutes more or till oil separates.
  • Then add dry spices and mix well. Add 1/4 cup water and give it a good stir.
  • Add boiled dal to the pan. Mix well. 
  • Add 1 cup water and simmer for 5 minutes on medium to low flame. Add water as per the consistency you need in dal.
  • Add 1 tsp lemon juice and finely chopped coriander leaves.

Notes

Adjust water as per the consistency you need in dal. You can make it both as dry sauteed curry or soupy dal.
