Sweet and Spicy Instant Mango Pickle
This is an easy and instant pickle. It can be stored for months in refrigerator.

  1. Heat 3 tbsp refined oil in a pan. Add 1 tsp cumin seeds, Let them crackle well.
  2. Add in fenugreek seeds, fennel seeds and dry red chillies. After 15 – 20 seconds add diced mangoes and mix well. saute on high flame for 2 minutes. Add red chilli powder, pinch of salt and mix well.
  3. Add crushed jaggery or jaggery powder to the pan. Add in water and cover with a lid. Let it simmer on medium flame for 10 minutes.
  4. Stir in between and check if the mangoes are soft and cooked. When jaggery will melt and cooked they will form syrup and check the required consistency.
  5. In the end add pickle spice mix (recipe check description link). Stir well. Turn off the heat when mangoes are well cooked and it has desired consistency.
  6. Let it cool completely and then store in an air tight container in refrigerator.
