Sweet and Spicy Instant Mango Pickle
This sweet and spicy instant mango pickle has all goodness of jaggery and you can have this guilt free if you are conscious of sugar intake. It gives awesome taste. However sugar is a substitute for this instant pickle. Summer season is the specific time if you want to make any mango pickles. In India there are different varieties of mangoes available. The pickles are prepared from raw mangoes. This instant pickle has sweet, savory, spicy, combination of all flavors.
Okay before you start preparing on basis of ingredient list here, refer to my link of spice mix which is also required for additional flavor to the pickle. I have prepared the pickle with this pickle mix and without pickle mix. So my suggestion, add the spice mix for additional flavor. It will take this recipe to next level if you are adding this pickle spice to the dish. But add in the end just before 1 minute of turning off heat. Recipe pickle spice mix here!
First make this powder and then start other preparation. Take small quantities if you don’t want to store more.
Its a mixture of these spices: Coriander seeds + Cumin Seeds + Fenugreek seeds + Fennel Seeds + Onion Seeds
This makes 250 gms of spice. Make this and store them. You can add to any vegetable or puneer curry (e.g. achari paneer, achaari baingan, achari bhindi and lot more.

- Coriander Powder – 100gms
- Cumin Seeds – 50gm
- Fennel Seeds – 40 gm
- Yellow Mustard seeds halves – 40gm
- Onion seeds – 10gm
- Fenugreek Seeds – 10gm
Dry roast them slightly and grind to a coarse powder form. Store in an air tight container.
Once you have prepared this, start preparing the instant pickle.
