Soya & Potato Curry

Soya chunks and potato (aaloo soya) is a very easy to cook item. Its nutritious and simple food to prepare. It can be prepared with gravy or dry depending on choice. Making this curry hardly takes 15 minutes. Soya chunks known as soya vadi in India is eaten in every part of country. These are used in Indian cuisine as well as in Indo chinese cuisine. It can be added to any curry or rice/ pulav. These are also called as meal maker. These are rich in protein and are considered as substitute for meat for vegetarians.

Instructions
  1. Soak soya chunks in hot water for 10 mins. Add pinch of salt to water. Drain out all water and wash soya in cold water twice. Squeeze out all water from soya chunks
  2. Add ginger garlic paste or chopped ginger and garlic, onion, dry red chilli in a blender and blend to a smooth paste.
  3. Heat one frying pan or kadai on medium to high flame. Put some oil to it.
  4. Once Oil is hot put one teaspoon cumin seeds. Let it crackle and then add onion paste. Sauté for 3-4 mins till it turns brown.
  5. Add chopped tomatoes and sauté till it becomes soft.
  6. Then add coriander powder, red chilli powder, turmeric powder and mix it well. Add 4-5 tbsp water and cook masalas for 2-3 mins more.
  7. Once the masalas cooked, add boiled and diced potatoes and soya chunks. And 1 cup of water to it and let it cook for 3-5 mins in low flame. Add salt as per taste.
  8. You can adjust water as per your taste. If you like to have dry masala, add lesser water. If you wish to have it with bit more gravy like then add ½ glass water more to the curry.
  9. Also you can skip adding potatoes if you want only soya masala.
  10. If you take raw potato then simmer and boil for 10 mins till potatoes are cooked completely. Turn off the gas. Add garam masala in end.
  11. Garnish it with freshly chopped coriander leaves and serve hot with paratha, chapatti & rice.
