Keto Special Spinach Soup

This Keto Spinach Soup is so close to my heart and I love this so much that at any point of time i can make this wonderful dish and serve. I don’t know why but when it comes to cooking any dish from spinach i feel very excited. It blends so well with any other vegetable, grains, lentils or herbs or even cooked alone tastes divine.

Kids might not like this leafy vegetable in simple form but you can make n so many dishes which your kids would love. I simply do one thing for my kid who is 4 years old now. I blanch few spinach leaves and puree them and then add them to the flour and make fritters, flat breads or any other item which your kid normally loves. You can refrigerate the puree for 3 days in air tight container. Spinach, one of the super food which is the leafy part of the plant is full of nutrition.  Like I say no other spices required to enhance the flavour. When you are feeling lazy and wanted to make something tasty, this is one great ingredient. It even tastes great in simple sauteed spinach.


This keto special soup has all the richness of butter, milk cream and goodness of spinach and garlic. To give this soup a twist, I have combined the soup and sauteed spinach together. The thickening agent i have used here is almond flour 1 tbsp. In absence of almond flour you can add chickpeas flour to it as well. This was so filling and tasty that alone this can served as your dinner.

 

Next time I will combine this soup with some good colourful and rich fritters. You can add any combination with any vegetables to create a fab meal.

Last time when I had made spinach soup (Fenugreek & Spinach Kadhi Soup), it was combination of fenugreek & spinach. I had added fenugreek leaves to it in sauteed form and mixed with the kadhi soup. That tasted divine with greatness of both spinach and fenugreek leaves. To give another twist I had added steamed fenugreek dumplings called as dhokli to the soup. The speciality of these comfort food is they can be taken as main dish, as soup etc.

Ingredients

Instructions
  1. Blanch 1 cup spinach leaves in boiling water. Keep the rest half chopped to saute.
  2. After blanching the leaves remove from hot water and immediately transfer to iced water to stop loss of natural color of leaves.
  3. In the mean time heat a pan on medium heat. Add 1 tsp butter and let it melt. Then add 2 tbsp chopped garlic and saute till light brown.
  4. Add spinach leaves and saute for 3 minutes till they are soft and cooked and all water dries up.
  5. So you have sauteed garlic spinach is ready.
  6. In the mean time when spinach is getting cooked, grind the palak and curd to a smooth puree. Don't add water while grinding.
  7. Add flour, and spices to the puree. Mix well. Don't add salt to it now.
  8. Remove 3 tbsp sauteed spinach for garnishing once its completely cooked.
  9. Add puree to the pan. Mix well and let it simmer for 5 minutes. At this stage add salt. If you have added salt to sauteed spinach then add accordingly.
  10. Turn off the gas. Serve in the bowl with sauteed spinach. Garnish with fresh cream and serve hot.
Recipe Notes

If you are not following keto then remove fatty ingredients like butter, fresh cream etc.
