Vegetable Pulao

Vegetable Pulao is one of the quick and one pot recipe. This is also known as Tehri in North India. Its prepared with rice and vegetables along with other regular spices. Normally when I want to make some quick recipe, dal khichdi or vegetable pulao seems the best option. This is again best when you have leftover rice with you. You can stir fry the vegetables and few regular spices and mix the rice. A better version is ready within 15 – 20 minutes. My focus is finding out ways to save cooking time without compromising on taste and nutrition fact.

The best combination of vegetables that blends well with this pulao are potatoes, cauliflower, bell peppers, green peas, carrots, green beans. I did not get fresh carrots so i skipped that. you can add whatever vegetable you want to add.


When I cook this for my diabetic dad I add bottle gourd instead of potatoes. There is no thumb rule that any vegetable can not be added to such versatile receipe.

All the vegetables should be sauted together or individually before adding to rice.

To cook in healthy way I used to boil these vegetables in water and then sauteing them in oil to fry. But in the course of time I got to learn one tip: when you boil vegetables and then saute they loose major nutrients and the nutrition value of the food decreases.

So this time I have sauted them directly instead of boiling and then sauteing. If cooking in cooker, saute for 3 – 4 minutes and then add rice, water and pressure cook for 2 – 3 whistles. You can add whole spices to the pulao. But I like it as simple as possible so that my kid can also have the same.

Instructions
  1. Wash and soak rice for 10 minutes. Then cook rice till its cooked and tender but not mashy.
  2. Chop all vegetables. Here I have taken only cauliflower, potatoes, french beans, green peas (Boil green peas)
  3. Chop the onion, tomato, ginger garlic, green chillies
  4. Heat oil generously in a frying pan or kadai. Add chopped potatoes
  5. Fry potatoes till they are cooked and golden brown in color. Stir fry or deep fry all vegetables.
  6. Similarly fry other vegetables one by one or together depending upon their cooking time.
  7. Remove the fried vegetables and keep separate for further use.
  8. Remove excess oil from kadai. in 7 8 tbsp oil add cumin seeds, ginger and garlic and saute for 30 secs, then add green chillies, onion to it and saute till onions are translucent. Then add chopped tomatoes to it.
  9. Saute till the tomatoes are soft and properly cooked.
  10. Add all fried vegetables. add the spices. saute for another minute.
  11. Add cooked or leftover rice to the kadai. Add salt as per taste and stir well
  12. Cook for 2 minutes more till all flours are incorporated to rice.
  13. Add chopped cilantro or coriander leaves and mix well.
Recipe Notes
  • Use Mustard oil or Pure Ghee for better taste.
  • Add whole spices ( (1 bay leaf, 2 - 3 cloves, 5 - 6 black peppers, 1/2 inch cinnamon stick or 1/4 tsp cinnamon powder, 2 pods of green cardamom and 3 -3 seeds of black cardamom) if want variation in taste.
  • Garnish with fried cashew nuts and raisins.
