Wheat Flour Dosa | Instant Atte Ka Dosa | Whole Wheat Crepes

Atte ka dosa is very easy to prepare. When we think of making dosa, it’s very time consuming as we need to soak rice and lentils for 5 – 6 hrs. And then we need to keep the batter for fermentation. So lots of preparation required for regular dosa which is prepared from mixture of rice and urad dal.

Whereas this wheat flour crepes or atte ka dosa is so quick and it’s made instantly within 5 minutes. Since it’s made from whole wheat flour, it’s healthy as well. This recipe makes a great tiffin box idea for kids. You can serve these instant dosa with any chutney or sauce or any curry. I love this with white peas curry.

How to make instant wheat flour dosa?

This dosa doesn’t require any preparation or fermentation. Instantly you can make in 5 minutes. I have added wheat flour 1 cup, rice flour 1/2 cup and semolina 1/4 cup to make this dosa crispy. Add curd and make smooth batter. In the end add eno or fruit salt or baking soda. This is optional.

Adding eno makes the dosa little more crispy. But you can skip adding eno or soda if you are making for kid’s tiffin box. Make a smooth flowing batter. Spread on hot greased tawa. Since I have made this for my kid I have not added any soda or eno to it.

Don’t heat the tawa more because it will be difficult to spread the batter on tawa.

If you want to make soft dosa then make the batter little more flowing consistent and then put ladleful of batter on hot tawa. In this case you don’t need to spread the batter on tawa. Since it’s flowing consistent, it will spread automatically.

Ingredients

  • 1 cup whole wheat
  • 1/2 cup rice flour
  • 1/4 cup semolina
  • 1 tsp salt
  • 1/2 tsp eno
  • 1 cup water
  • 6 – 8 tbsp refined oil
  • 2 tbsp curd

Instructions

  • Take a mixing bowl. Mix all flour, salt and curd in a bowl. 
  • Add water slowly and gradually mixing nicely. Make sure it’s lumps free.
  • heat 1 tsp oil in a dosa tawa or flat pan. 
  • spread oil on whole pan with help of a tissue or paper napkin. You can use brush also for this.
  • Put one ladle full of batter and spread quickly.
  • When the bottom will get cooked, flip it to other end lightly.
  • This will take 2 – 3 minutes hardly. 
  • Remove from heat and serve with chutney or ketchup.

Notes

If you want to make soft dosa, then take only wheat flour and semolina. Make a batter with curd or buttermilk.

This potato cheese sandwich makes a great tiffin box idea. My 4 yrs old kid loves this sandwich in his tiffin box. Kids love cheese. Even we adults do love cheese. But because of fat concern we do just avoid this. But you can have this once or twice in a week. I also make potato spinach sandwich, pizza sandwich, chocolate sandwich for his tiffin box. And for a mom, happiness is when tiffin box is empty. That’s too dramatic 😉 . But yes we all want to see that child is enjoying his food. If kid is fussy eater like mine, it’s always a headache to think about interesting tiffin box ideas. So whenever my kid is happy with any dish, I feel like sharing on blog so that I can help other moms.

Though every kid has different taste and food habit, we can always try changing and inducing more healthy food habit. I have shared one more recipe of party appetizer veg seekh kabab, paneer corn seekh kabab, potato lollipop, potato bites for kid’s tiffin box , Cheesy potato croquettes recipes. And the good news is that you can prepare the mixture and refrigerate them. In morning you can just fry them or shallow fry them and make sandwich/ burger of them. Or even you can give them as finger foods. These are healthy as made from green vegetables, potatoes and cheese. So it will keep our child full for longer.

Other Kid’s Tiffin Box Ideas

I will mention here what are the other items I do give my child in his tiffin box. With age you can try more recipes. These are basically finger foods for age group 2 yrs to 5 yrs (kids and toddlers).

My kid is very fond of parathas. So I do try to give variation in that. I make aloo paratha, gobi paratha, lachha paratha, methi paratha, paneer paratha, dal paratha. Dal paratha I make because he doesn’t like dal but he likes paratha. So I knead flour in cooked dal and make paratha with that dough. In this way he gets nutrition of lentils as well. Similarly I try to stuff vegetables and paneer in paratha. And he enjoys such food. So I’m happy too. While making paratha for my kid, I use ghee instead of refined oil. Ghee is very essential for bone health and brain development of kids.

You can also give idli, dosa, other savory crepes and pancakes, poha, upma, vermicelli upma (gives feel of maggie). In many schools junk foods are not allowed in tiffin box in order to develop healthy eating habit. So you can not give maggie, pasta, pizza etc in tiffin box. So in place of maggie use substitute like vermicelli and add different veggies to it. Read my vermicelli upma and try adding vegetables you think your kid would love. Minimize or remove chilli powder/ green chilli from recipe.

Ingredients

For Stuffing

  • 2 cheese slice
  • 2 med potatoes
  • 1 small onion finely chopped
  • 1 tsp coriander powder
  • 1 tsp red chilli powder
  • 1/2 tsp chat masala
  • 1/2 tsp salt
  • 1 tsp lemon juice
  • 1 tsp coriander Leaves finely chopped

For Sandwich

  • 4 slice bread (white or multi grain)
  • 2 tbsp ghee
  • 4 tbsp green chutney (optional)

Instructions

  • Boil potatoes for 3 whistles or till cooked.
  • Remove skin and mash it completely. Add other ingredients mentioned above in ingredients list under stuffing category (except cheese slice).
  • Mix all ingredients and prepare the mixture.
  • Take 2 slice of bread and apply green chutney on one side of both slices.
  • place potato stuffing on one slice and then place cheese slice. cover it with 2nd bread. 
  • Aplly ghee on both outer side of bread sandwich and place on tawa or grill it in sandwich maker.
  • Grill till the bread turn light golden and crisp.
  • Sandwich is ready. Serve with green chutney or tomato ketchup.

Notes

While making for kids, don’t add chilli powder at all.
Also skip green chutney while making for kids.

How to make Potato Cheese Sandwich?

Boil potatoes. Peel off skin and mash it completely.

Add coriander powder, red chilli powder, chat masala, lemon juice, salt, onion, coriander leaves and mix them well. (skip red chilli powder for kids)

Apply green chutney on one side of both slices. Put stuffing on one bread and spread evenly.

Place cheese slice on potato stuffing. Cover it with 2nd slice of bread.

Apply ghee on bread and grill it or shallow fry on tawa till golden brown.

Gobi Paratha|Stuffed Paratha|Cauliflower Stuffed Bread

Gobi paratha or stuffed paratha is one popular breakfast dish in India especially in North India. This is generally a winter vegetable but now a days these are very much available in all season and thanks to the cold stores and technology. But the seasonal fresh vegetables are totally different from the stored ones. I still remember those childhood  winter days when we wait for seasonal cauliflowers. And trust me the taste and that nice aroma while cooking those seasonal vegetables  is missing in these all- season-available-veggies.  I am sure you will agree to me on this. Well that’s also magic of technology which help us eat almost all vegetables in all season.

Do you Know? 
  • Karnataka is the only state where cauliflower is harvested round the year. Rest all states harvest during cold season.
  • India is second largest cauliflower harvesting country.

Since cauliflower is low in carbohydrate, this is  a good vegetable for them who are following keto diet. But since this paratha is prepared with wheat flour and has gluten, this paratha is not recommended for keto diet. This is vegan. If you are gluten allergic, it’s a no for you. To make it keto friendly and gluten free use almond flour instead of wheat flour. In such case the preparation method will vary a little.

Cauliflower is a versatile vegetable and goes very well with almost all kind of preparation. How to make gobi paratha?

Coming back to my favourite breakfast recipe, let’s make this delicious cauliflower stuffed bread or Gobi paratha. This is made from finely grated cauliflower florets. One thing to keep in mind before starting any preparation of cauliflower recipes, clean them thoroughly for at least 4 – 5 times. This is an easy process and hardly takes 30 minutes to make 8 – 10 parathas. The 3 step process is:

  1. Grate completely cleaned florets finely & mix with other spices to make stuffing.
  2. Make soft dough of wheat flour. Roll them to circles.
  3. Stuff gobi mix in rolled flat bread and shallow fry in ghee or butter or refined oil.

Serve these gobi parathas with curd or raita or pickle in breakfast or in main course. Even this is one good kids tiffin box item.

Ingredients

  • 1 cup Wheat flour
  • 1/4 tsp Salt (for dough)
  • 1/2 cup Water
  • 8 tbsp Refined Oil/ Ghee
  • 1 medium Cauliflower head finely grated
  • 1 medium Onion finely chopped
  • 1 tbsp Coriander leaves finely chopped
  • 1 Green Chilli finely chopped
  • 1 tsp Coriander Powder
  • 1/2 tsp Red Chilli Powder
  • 1 tsp Lemon Juice optional
  • 1/2 tsp Salt (for stuffing)

Instructions

  • First clean cauliflower thoroughly and check if any bugs in it. wash it under running water for 5 – 6 times. Other wise divide the whole cauliflower into 5 – 6 larger florets during cleaning. Then air dry for 5 minutes before grating
  • In the meanwhile prepare dough by mixing 1 cup of flour with salt as per taste and one tbsp oil. Add water slowly and gradually to make a dough consistency. Knead well and make soft dough. cover it and keep aside for 5 mins.
  • Then Prepare Stuffing by mixing grated cauliflower, finely chopped onions, green chilli, coriander leaves, salt, coriander powder, red chilli powder, lemon juice and mix it well thoroughly. Now stuffing is ready to use.

  • Gobi paratha stuffing
  • After 5 mins make medium size balls of equal size. Then roll out the balls into circle of 3cm radius with help of rolling pin and keep them aside on a clean plate. Don’t stretch to very thin circles. It should be thick so that we can stuff it properly.
  • Then put the cauliflower stuffing on the centre of rolled circle. Then join the edges of this in the centre (as shown in picture) and press it again to make a ball. Make sure it’s sealed properly from all sides.

  • Heat a pan on high to medium flame and place the rolled paratha. When one side is done partially Flip it to other side. Well rolled paratha normally puffs up when cooked properly.
  • Add ghee or refined oil on top side. Then again flip it and apply ghee on the other side. Flip again once or twice to cook it properly on both sides. It will be golden brown when completely cooked. Also check the sides of paratha by pressing the edges with a spatula so that they will be equally cooked.
  • Now take out the Gobi paratha and serve with extra butter/ makhhan and curd/ raaita/ Prickle.

Look at this colourful vermicelli biryani. Tempting!!

Also it has all nutrition of green veggies like green peas, potatoes, spinach, carrots, beans, red bell pepper & yellow bell pepper. Again I would say that this vermicelli is hand made and home made.

Vermicelli biryani is an easy breakfast recipe which is healthy and kids friendly. I have added shahi biryani masala to the dish. This added extra flavor to the dish. You can add simply maggi magic masala also to the vermicelli for kids tiffin box. Since it looks like that of maggie you can replace maggie with this recipe. In many schools maggie is not allowed in tiffin box. But you can give this in place of maggie. This is nutritious and filling also.

What are other vermicelli dishes we can make?

My vermicelli is handmade by my mother-in-law. I must admire her expertise and speed in But you can anyways get that in any supermarket. Add whatever vegetable you feel your kid loves. From vermicelli you can make vermicelli upma, pulao and biryani. Although there is little difference in method and spices we use for different recipes. Also it makes great sweet dessert or pudding. This vermicelli pudding just takes 5 minutes. Infact any vermicelli dish is quick as it takes 3 – 5 minutes to get cooked.

This is a 10 minutes recipe. What else we need on lazy mornings? A breakfast that is tasty and nutritious.

Ingredients

  • 1 cup vermicelli
  • 1/4 cup green peas
  • 1/4 cup carrots
  • 1/4 cup spinach leaves
  • 1/4 red bell pepper

  • 1/2 tsp cumin seeds
  • 2 garlic pods
  • 4 curry leaves
  • 1 tbsp Shahi Biryani Masala
  • 1/2 tsp salt
  • 1/2 tsp coriander powder
  • 1/4 tsp red chilli powder
  • 1 glass water

Instructions

  • Boil vermicelli in a sauce pan. Add 1/2 tsp salt and 1/2 tsp oil to the pan. Boil for 3 - 5 minutes till the vermicellis are soft.
  • Strain out from water after removing from heat and wash out with cold water. This is to avoid sticking of strands together. Add few drops of oil and mix well.
  • In a pan heat oil. Add chopped garlic, onion, bay leaf (optional), cury leaves. Saute for 2 minutes till onion is translucent.
  • Add all vegetables and saute for 5 minutes they are cooked well.
  • Add vermicelli and stir well. Add all spices including salt and mix well. Cook for another 5 minutes and saute well.

Wheat Flour Crepes | Atte Ka Cheela

Wheat flour crepes or atte ka cheela are savory crepes made from whole wheat flour. However you can mix it with other flours. This is similar to besan cheela or tomato omelette but here the main ingredient is wheat flour. This is a healthier version of chilla. Aate ka cheela or chilla is easily digestible because of whole wheat flour and a recommendable food for kids and toddlers.

My kid loves this aate ka chilla and calls it as dosa as it resembles regular dosa slightly. This is an instant recipe and does not need any preparation. I have started giving this to him when he was 1 yr old. Even today he loves this atte ka dosa in his tiffinbox.

How to prepare atte ka chilla?

I make atte ka chilla and atte ka dosa both. Though both are similar with little difference in method of preparation. In atte ka chilla I add onion, ginger, green chillies and curry leaves. Whereas dosa is plain crepe made from wheat flour or mixture of crepes. You can make any stuffing to serve with atte ka dosa.

When mixing water to flour, add gradually so that it will be lumps free. The batter should be medium flowing consistency. It should not be very thick or very thin. Mix chopped onion, ginger, green chillies, curry leaves.

Heat oil and then spread the batter.

There is another way. Make batter of wheat flour, salt and water.

Heat oil in a tawa. Put curry leaves, ginger, onion 1/2 tsp and wait for 10 15 seconds. Then add batter and spread. I normally make chilla with this method.

These savory crepes have no other spices added other than salt, curry leaves, ginger. Hence easy to feed toddlers and kids. If you want you can add spices like regular besan ka cheela (or chilla). But I like it plain with onion, ginger and curry leaves. You can serve these with tomato ketchup/ any chutney or with tea as breakfast.

It can be made in sweet and savoury both ways. In the sweet pancake, sugar is added to the flour first and then poured to the pan and shallow fried (just like malpua). Well I like to add banana puree to the flour mixture. You can make this mixture with milk

One more point to note: if you are making dosa and want to make them crispy, add semolina and eno or any fruit salt.

Ingredients

  • Wheat flour- 1 cup
  • Salt as per taste
  • Ginger – 1inch finely chopped
  • Onion – 1 finely chopped
  • Green Chilly – 2 finely chopped
  • Curry Leaves – 6-7 Finely chopped
  • Oil – 7-8 Tbsp

Instructions

  • Mix 1 cup of flour with 2 cups of water to bring a medium thick consistent batter. Add salt as per taste. Add water gradually and mix well till its lumps free.
  • Place a pan on low to medium flame. Put 1 tsp refined oil. Put small amount of finely chopped onion, ginger, chilli, curry leaves, coriander leaves.
  • Immediately add one ladle batter on it and spread evenly as we do in dosa. Keep the flame in low as it will take time to cook properly. Keep on checking with a fork or spatula and turn it to the other side. Let it cook for 2-3 mins.
  • Remove from heat if it’s done completely. Garnish and serve with coriander chutney or tomato ketchup.

Notes

You can add oats flour to wheat flour to give it a healthy twist. Don't miss ginger and curry leaves as they add to the flavour dominantly.
Add grated potatoes and carrots in the batter for toddlers.

Tomato Omelette is a vegetarian omelette and gluten free recipe. Sometimes I think “why this is called as omelette?” Because when we say omelette, what comes to our mind is “eggs”. May be the same color or so. If you know the answer of this “why” then please comment below.

This is vegetarian version of omelette. This is made from gram flour. Tomato being the main ingredient the name is tomato omelette. In hindi its called as Chilla or cheela or Besan ka chilla. Same chilla can be made from other flours as well like moong dal chilla, aate ka chilla, sprouts chilla etc. Basically these are crepes or savory pancakes made from flours which are flavoured with onion, tomato and other aromatic spices.

While making tomato omlette we can also add variation to it. Like instead of tomato grated potato or grated boiled potatoes are used and they are crispier and tasty dish.

Serve these chilla with breads as sandwich. This will be more filling. I make these tomato omelette sandwich for my kid’s tiffin box.

Ingredients

  • 1 cup Gram flour/ Besan
  • 1 tsp Salt (or as per taste)
  • 1 tsp Ginger garlic (crushed finely)
  • 1 Onion finely chopped
  • 1 large Tomato finely chopped
  • 2 tbsp Coriander– 1tbsp chopped finely chopped
  • 2 Green Chilli finely chopped
  • 2 tsp Coriander Powder
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Hing or asafoetida

For Shallow frying

  • 6 - 7 tbsp Refined Oil

Instructions

  • Mix all ingredients mentioned above (except oil) in a large mixing bowl.
  • Add 1/2 cup water gradually and stir well. Make a  smooth flowing batter. Make sure the batter is lumps free. 
  • Keep the pan on medium flame. Put one tbsp oil on it. When oil is hot put one ladle batter on it and spread evenly and lightly so that it won't break.. 
  • Cook it on low flame else it will turn brown at bottom without getting cooked evenly. it will take time to cook properly
  • Drizzle some oil from surrounding and let it turn color slightly on top of cheela.
  • Flip it to the other side. Let it cook for 3 mins more.
  • Remove from heat if it’s done completely. One tomato omelette will not take more than 5 minutes to get cooked in low to medium heat.
  • Garnish and serve with coriander chutney or tomato ketchup and bread toast.

Notes

The batter should not be very thick or very watery.

Onion Potato Poha | Kanda Batata Poha | Easy Breakfast Recipe

Poha is one of the healthiest breakfast dish. This dish is popularly known as kanda poha (onion poha). Originally this is a popular maharashtrian food item. However this is equally loved in other parts as well. This is made from flattened rice known as poha. This onion potato poha or kanda batata poha is similar to the authentic kanda poha except for the potatoes I love to add. Adding potatoes makes the breakfast more filling. This makes an wonderful kid’s tiffin recipe as well.

I add potatoes and green peas to my poha. Fried peanuts are also important ingredient of poha. You can add grated coconut. However I don’t like coconut on poha so i have not added it. Rather I like to sprinkle some bhujia sev or finely chopped tomato and onion on top of it. Well this is called as kanda poha because onion or kanda is the main ingredient in this recipe.

This onion and potato poha is excellent breakfast or tiffin box recipe for kids because poha is high in carbohydrate. So it helps in creating energy for our super-active kids. Also poha is easily absorbed and easily digestible. So it keeps tummy happy and full for longer.

Tips to prepare perfect onion and potato poha / kanda batata poha

1. Poha is one of the simplest recipe. It doesn’t require much preparation and hard work. Only thing you need to do is wash poha and leave it on a colander or stariner for 5 minutes. This will soften the poha flakes.

2. But don’t soak in water. Just wash it off and spread on a dry plate or colander or strainer.

3. If you will soak it in water, then it will be moist with excess water while cooking. in such case dish will be mushy and this will spoil the taste of it. Poha should be fluffy and soft.

4. If you feel it’s not wet enough (and soft) and little stiff, sprinkle some more water and keep aside for 2 – 3 minutes before adding anything.

5. I shallow fry peanuts first and then remove them from oil and add in the end. I do this because, by the time potatoes gets cooked, peanuts will be burnt and will not taste good.

6. Another thing I do, After adding mustard seeds I add chopped potatoes and cook on low flame for 5 minutes or till it’s cooked. Then I add onion and saute. Else by the time potatoes get cooked, my onion turns brown and I don’t like that burnt onions in my poha. Otherwise you can use boiled potato cubes for this recipe.

7. Add lemon juice for better taste. I like this which finely chopped onion and tomatoes on top of it. garnish with handful of coriander leaves.

Ingredients

  • Poha / Flattened Rice - 1 Cup
  • Refined Oil - 4-5 tbsp
  • Peanuts – 1 Tbsp
  • Mustard Seeds- ¼ tsp
  • Onion- ½ sliced
  • Potato – 1 diced
  • Curry Leaves- 6-7
  • Green Chilli- 1 -2
  • Turmeric – ¼ tsp
  • Salt- ¼ tsp or as per taste
  • Lemon juice 2 tbsp

Instructions

  • Take 1 cup of poha and wash it properly and keep it aside to dry for some time. Then add salt as per taste to the washed poha and mix gently.
  • Put a kadai on gas top & put 3 - 4 table spoon refined oil. Fry the peanuts and remove them once reddish brown. But take care not to overdo as they will give burnt taste.
  • Add 2 Tbsp oil to it. Once the oil is hot put mustard seeds and let them splutter.
  • After that put curry leaf, green chilli and onion into it. Add diced potato and cover with lid. Keep on low flame.
  • Once potatoes are properly cooked, add 1/2 tsp turmeric powder and mix well. After that add soaked and washed poha into it.
  • In the end add fried peanuts, coriander leaves and one/ two table spoon of lemon juice in it.
  • Sprinkle 5-6 drops of water and place the lid on kadai.
  • Then after 1min remove the pot from gas stove. Now poha is ready to serve.

This is one of the most common and popular dish in North India. Its not only healthy but also easy to make. This is good food for toddlers and kids. My kid loves this paratha. So I keep them in his tiffin box. In this way kids will get the goodness of fenugreek leaves to your kid. Methi paratha goes best with raita, plain curd, tomato sauce or any curry. You can serve them with tea/ coffee in breakfast or tea time as snacks. It’s also called as Thepla in Gujrat. Unlike aloo paratha they are very light and healthy.

Methi or fenugreek is light bitter in taste. But I love that bitterness blended with other spices while making any preparation. This is one of the excellent food for diabetic patient. All bitter vegetables are like a boon to diabetic patients. They keep balance and reduces blood sugar level. But be careful in cleaning the leaves thoroughly before using any leafy veggies.

Ingredients

  • Wheat Flour- 1 cup
  • Salt as per taste
  • Water – As required
  • Methi – 1 bowl Finely chopped
  • Refined Oil/ Ghee – 6-8 tbsp
  • Green Chilly – 2 finely chopped
  • Coriander Powder – ½ tbsp.
  • Red Chilli Powder – ½ tbsp.
  • Turmeric powder – a pinch

Instructions

  • Take a mixing bowl. Add finely chopped methi leaves, green chilli, salt, coriander powder, red chilli powder and mix it well.
  • Add 1 cup of flour and one tbsp oil to the mixture. Add water slowly to make a dough consistency. Knead well and make soft dough and keep aside for 5 mins. After 5 mins make medium size balls.
  • Then roll out the balls evenly into circle with help of rolling pin.
  • Heat a pan on high to medium flame and place the rolled paratha on it. When the base is slightly cooked flip it to the other side to get it cooked.
  • Add ghee or refined oil on top side. Then again flip it and apply ghee on the other side.
  • Flip again once or twice to cook it properly on both sides.
  • Now take out the paratha and serve with extra butter/ makhhan and curd/ raaita/ pickle or any curry of your choice.
