Indian Pickle Spice Mix

In India food is incomplete without pickles. It has its existence since many ages. Indian pickles have wide range of flavors and textures. There are three basic category of Indian pickle 1. preserved in salt, 2. preserved in vinegar & 3. preserved in oil. The process of pickling is to preserve the vegetables or fruits. Again in the process of preserving, the agents used (salt, vinegar, oil) gives flavour along with the spices we add to it during pickling. It would not be that mouth watering if you store pickles only in salt or vinegar. So the real magic comes from the spice mix we add to it. This gives it unique aroma that enhances the taste when preserved. The longer you preserve it the tastier pickles will be. I make pickles one year in advance, However there are also recipes of instant pickles.

Last year while preparing mango pickle at home, I had made this pickle spice mix. Pickle spice mix (Achaar Masala) is a blend of all aromatic spices which are ground together. While preparing pickle add the this pickle spice mix along with oil and salt and preserve for years. You can always make some extra spice mix and store them in a air tight container.

  2. No need to chop onion, garlic or dry roast the whole spices, cool it and then grind to fine powder. It saves almost 30 minutes of your cooking time.
  3. Sprinkle 1 tbsp spice mix on dry or stir fried vegetables. It will give a pickly taste to the preparation.
  4. You can make instant pickles quickly by adding this spice mix.

Lets make the Spice Mix.

Make this spice mix and add to the dried raw mangoes. Add salt, red chilli powder, asafoetida and mustard oil generously. Store till the mango turns juicy and soft with all flavors and aroma of spices. Add little more salt as this speeds up the process of pickling and helps in softening process.

Ingredients

  • Coriander Powder - 100gms
  • Cumin Seeds - 50gm
  • Fennel Seeds - 40 gm
  • Yellow Mustard seeds halves - 40gm
  • Onion seeds - 10gm
  • Fenugreek Seeds - 10gm 

Instructions

  • Mix all spices on a dry plate and sun dry this for a day.
  • Or Dry roast all ingredients on medium tolow flame but careful to avoid burning of spices.
  • Dry roast all spices separately one by one but not more than 1 - 2 minutes for every spice.
  • Mix them together in a grinder jar. Spice mix is ready. Transfer it to some air tight container and store for future use.

Cumin seeds are most essential part of our daily cooking because of its strong and punching aroma. It’s full of medicinal properties as well. Cumin seeds are used both in curries, dry fried vegetables, in all tadka/ tampering. You can also use them in dry roasted form. These are additional seasoning on raita and dal. Both forms give little different taste. However the course powder form of dry roasted cumin gives strong aroma and nutty flavor.

2. Coriander (Dhania)

This is one of the oldest known spices of world. If you are making powder form of it at home then sun dry or lightly dry roast on medium flame and grind this using mortar & pastel or mixer grinder. This will enhance the flavor. The powdered form will lose its flavor quickly. So store it in airtight container or inside freezer. The seeds are warm, mild with a citrus undertone just like orange peel.

In case of coriander both leaves and seeds are essential in almost all dishes except for the desserts. It’s also major part of many blended spice mix like garam masala, curry powder, sambar masala, and many more including pickle making spice mix.   1. Mustard Seeds (Sarson)

These are small tiny balls ranging from yellow to black. They are important spice with a strong and hot flavor. Both black and yellow mustard seeds when ground with water form a yellowish paste. But be careful while adding mustard paste as it gives slight bitter taste if you use in larger quantity.

The greens (leaves) of the plant are also edible and have a special place in northern part of India (e.g Sarson ka saag). Similarly in West Bengal, mustard seeds play an important role in their food.  Even this is equally useful spice in South Indian Cuisine.

Use this in moderation else it will dominate the taste.

However it’s different from cassia bark slightly as it has sweeter flavor and fragrance than cassia bark though both belong to same family.

12. Asafoetida

This spice commonly called as hing is native to Iran and Afghanistan but mainly cultivated in nearby India. In India it’s basically cultivated in Kashmir. It has many medicinal properties.

Its pungent smell adds a distinct flavor to the dishes. It’s a standard ingredient in vegetarian dishes such as dry fried vegetables or lentils. It’s the best tampering for lentil based dish such as Dal, Sambar, Rasam. With curd based preparations like Dahi Kadhi, Gatte ki Sabzi, raita etc, it adds that extra punch of flavor. It’s healthy for digestive system. That is the reason this is a major ingredient in food and pickles. If not stored properly it loses its aroma and fragrance.
